- My Husky Denies Eating The Birthday Cake!
My Swiss roll recipe:
Preparation time: less than 30 mins
Cooking time: 10 to 30 mins
Serves 6 - 8
Ingredients
For the sponge
- 4 free-range eggs
- 115g/4oz caster sugar, plus extra to dust
- 1 vanilla pod, seeds only
- 75g/3oz self-raising flour
- 200ml/7fl oz double cream
- 1 tsp vanilla extract
- 200g/7oz raspberries
For the raspberry jam
- 150g/5½oz caster sugar
- ½ lemon, zest and juice
- 350g/12oz raspberries
1. For the sponge, preheat the oven to 190C/375F/Gas 5 and line a 23x33cm/9x13in Swiss roll tin with baking parchment.
2. Place the eggs, sugar and vanilla seeds into a bowl and whisk until very light, fluffy and thickened.
3. Sift the flour over the mixture and fold in carefully.
4. Pour the mixture into the lined tin and smooth it out with a spatula until evenly spread.
5. Bake the sponge for 10-12 minutes, or until just firm to the touch.
6. Place a sheet of baking parchment that is slightly bigger than the tray onto the work surface and dust with some caster sugar.
7. Turn the sponge out onto the parchment paper, then peel off the parchment on the bottom of the sponge. Set aside to cool slightly.
8. Whip the double cream to soft peaks with the vanilla extract.
9. For the raspberry jam, heat a frying pan until hot, then add the sugar, lemon zest and juice and cook for 3-4 minutes until the sugar has dissolved and thickened slightly.
10. Add the raspberries to the pan, mix well and cook the jam for a further 3-5 minutes until thick. Remove the pan from the heat and set aside to cool.
11. To assemble the roll, spread the raspberry jam over the cooled sponge, leaving a 2cm/1in gap around the edge.
12. Spread the whipped cream over the top then sprinkle over the whole raspberries.
13. Take the longest edge, then using the parchment paper underneath, roll up the sponge quite tightly, making sure the filling stays inside.
14. Roll the sponge off the parchment, dust with extra caster sugar and cut into slices to serve.

I’m surprised Key didn’t show up sooner. As soon as my Mom or I turned on the kitchen light, our Golden Retriever made a mad dash to see what we were doing. Key sure was doing a lot of paw stomps. My family's traditional birthday cake is a dark chocolate cake, sliced into thin layers (as many as 8), filled and frosted with coffee whipped cream (flavoured by dissolving instant coffee powder in a cupful of unwhipped cream, and adding it to the rest of the creeam before whipping it all), and chopped pecans.
We've had this cake for almost every birthday, for more than 50 years.

I love making jam, scraping it out of the pain it tastes like those chewy fruit rollup sweets! I make raspberry with lemon juice, strawberry and blackcurrant with cinnamon, the blackcurrants I grew myself.

I've made the swiss rolls many times but it's a real pain in the arse to roll it as its keeps breaking! At least Key appreciate everything you made for him. Bless his furry paws.

Oh not that's terrible! If you're able to and don't have any yet, please try and get an alarm or survailence camera, even just stickers that clearly say you have a camera install might deter people and help you feel more at ease.

I remember when I was 9 our old cat called Lizzie stole an entire roast chicken 😅😂
The cat we had before Key stole sausages out of the frying pan! And drink gravy that was ready for a roast dinner! He also knew how to open his food cupboard! Key and he would have been partners in crime had they met!

When I was in high school, my mom and I made a white chocolate raspberry Yule log cake for my French class; we strained the raspberry filling and then we rolled it like a Swiss roll and decorated it with sugared mint leaves, sugared raspberries, and these fondant-like mushrooms. It took all day on a weekend, but it was so fun and so worth it, and your recipe makes me want to make a Swiss roll again, so thank you, Jodie!

Many years ago the Boxer dog that we had did exactly the same thing; it was my 21st cake and Mum and Dad had had a special one made for me with the most stunning icing on it (they did the same with my siblings).
