I made it! Love the flavors! It's a keeper. I did saute in olive oil and added a small carrot finely chopped that needed to be used up. I like the fact that the soup is chunky instead of pureed. I finally now have a delicious black bean soup recipe to enjoy. Thanks so much for sharing.
I hope you love it. I find it so easy, quick and delicious! And it freezes well too if you are meal prepping it! The taco seasoning mix is really good with no unhealthy fillers like the store bought envelopes that usually have MSG or sugar and other ingredients I can never pronounce (so I stay away). I make my taco seasoning in double batches so I always have it ready for whatever. It stores well in a glass jar (like a mason jar) in my pantry for months. And it's especially good to use in chili, soups or burritos and tacos (whether you are going vegan and using lentils or tofu, or carnivore and using ground chicken, turkey or beef - so I'm told-wink).
