I like to use my hand blender and puree like 25% of the soup and add it back in. So then you have a mix of creamy and whole beans. I also add cilantro stems to the sofrito for a little more herbiness!

As someone who made the confit chicken recipe, I can vouch that the leftover oil is in fact incredibly delicious and makes everything taste better, especially roasted veggies 🤩

I feel EXTREMELY validated by Carla in that I use the same technique of starting my beans simmering and working on the aromatics separately & then combine when ready. Great use of time!

I have had wonderful results with running the onions, peppers, and other vegetables that are going to go into the soup through the blender and draining the water from the results. Cook the beans in that 'blender water' with the various spices. When the beans are almost done dump in the pureed vegetables so that they are not so much cooked as 'thoroughly warmed'. (You can work in a lot of different vegetables with this technique.)
this is a very brazilian way to cook beans! (cook it first without much seasoning and add it later). the way you did it is literally how my mother taught me! interesting.

Good soup Carla. I made it just as you said. However in Atlantic Canada we can't even get a good turnip or potato( they all go to McCains.) I couldn't find those dried chilis, so I used dried red chilis packed by Barbour. Would love to try it with the chilis you suggest, but alas!

the trickiest part of this type of bean-making is achieving that creamy consistency in the end, so it was disappointing that there weren’t any details on that :( one technique is to purée a small serving of the beans and put it back into the mixture, but this happens to various degrees of success, so I really wish she had shared her own secret. nevertheless, a perfect recipe!
On a different note, I have noticed quite without conscious effort that I’ve been opting for black tea (or sometimes herbal) over coffee and expresso drinks when go to my local cafe!?!? Anybody else feeling this vibeshift?
I like spice,but 2 chipotle peppers sounds like a lot. I usually regret adding the full amount. Perhaps the brand makes a difference. I typically use Embasa. Thoughts from anyone who has made the recipe as described in the video?

A big scoop of sour cream and some cubes of avocado might change your mind. Jacque Pepin’s wife liked ripe bananas on hers (I often use his recipe and let my pot bubble away all day :)) My sister likes chopped hard boiled egg and cilantro (as does Jacques). I make a huge pot and freeze about a quart. The defrosted soup is extra delicious.

Why not using a high pressure pot for cooking unsoked beans? It doesn't take long to cook the beans and is quite efficient!

After working with hot peppers I rinse my hands with rubbing alcohol. Capsaicin is soluble in alcohol. Vodka also works.
