    Bacon grease mayonnaise is a delicious and versatile condiment that is perfect for keto and carnivore diets. It is also a great way to use up leftover bacon grease. This recipe is easy to make and only requires a few ingredients. Dr. Berry has a great recipe, but a lot of people have trouble with it. Making it in the blender makes it almost foolproof.
    To make bacon grease mayonnaise, you will need:
    2 egg yolks
    1 cup bacon grease
    2 T lemon juice
    2 t Mustard
    1/2 teaspoon salt
    1/2 teaspoon black pepper
    Instructions:
    In a blender or food processor, blend yolks and all ingredients other than bacon grease.
    Blend on high speed until the ingredients are combined. You may need to stir by hand depending on your blender.
    Slowly add in bacon grease a little at a time until about a quarter is used. Then, drizzle in bacon grease in a steady stream until all incorporated.
    Taste and adjust the seasonings as desired. Transfer the mayonnaise to a jar or container and refrigerate for 1 hour before serving.
    /Keeps in the refrigerator for up to 2 weeks.
    Tips:
    If you don't have a blender or food processor, you can make bacon grease mayonnaise by hand. Simply whisk the ingredients together in a bowl until they are combined.
    If your bacon grease is solid, melt it before using.
    You can add other ingredients to your bacon grease mayonnaise, such as Dijon mustard, garlic powder, or onion powder.
    Bacon grease mayonnaise is a great spread for sandwiches and wraps. It can also be used as a dip for vegetables or seafood.

    I cook almost everything in bacon grease. I like to use the immersion blender on this, but it is personal preference. For me, instead having to clean a blender or processor, I like that the immersion blander makes the mayo right in the jar and you only have to clean the stick blender. I also love to add some fresh garlic to it. The trick is to grate the garlic first, before blending.

      I always use the stick blender, but I got a lot of comments from folks who were messing up their mayonnaise trying to use an immersion blender. I wanted to show a little easier option that might work better for some people. I think the key is to get a really immersion blender. I really think that makes a difference.

    My grandmother showed me many, many, years ago to use the failed mayo in new mayo. Once the emulsion took and she had added all her oil she would drisel in the failed mayo and it just worked. Never once saw her throw any it because the emulsion broke.

      Did you try it yet? I don't see how you would drizzle in the grease.

      @@critter4004you have to add a little in, blend it, open it, put a little more in, blend it, open it. It's not the ideal way to do it, but if it's all you have to work with, it's doable. The immersion blender is my favorite way to do it.

    I have an Oster blender with a narrow bottom and glass jar. It’s about 20 years old and I use it for exclusively for mayo.

    Most blenders and food processor you can’t take the lid off for safety reasons. It shuts it off so for those people you’ll just have to stir it or pour it all in and just keep mixing it until we blended.

    food processor would probably would work better than a blender.

      It would. I always use my stick blender, But some folks had trouble with it. To me, it's super easy once you get the hang of it

    I have a lil 3.5 cup kitchen aid food chopper they call it and the lid has the weep hole for emulsifying stuff like this. I just tie the handle shut to keep it running and slowly add the oil and it works great, real small so easy to store. I’m not saying it’s the best just what I use.

    Get yourself a blendtec blender. For general use. Yes they’re expensive but as they say “cry only once”. All said make mayonnaise with a stick blender, of which several brands will get the job done.

      I've been looking at those for a while... I usually always use my immersion blender, but some people had trouble using it so I was trying to come up with a way to make it easier. I also did a spreadable bacon grease mayonnaise video. It's pretty much what I make 90% of the time now

    Hi there, great video, I use a stick blender and a mason jar to make my mayo and also for hollandaise. It works like a charm and there's no splatter! Give it try, Im sure you'll use that every time:)

      Hi! Yep, I use that every time. I was trying to come up with a way for people that were having trouble with a stick blender to have another option. I have a video on how to make my Duke's mayonnaise and bacon Duke's mayonnaise also. Some people were having trouble with the stick blender, So I was trying to give them an alternative. It's a whole lot easier for me to use the stick blender, but some folks have trouble with it. Thanks for watching! I need to do a hollandaise video sometime too 😁

    I'm suprised that the bacon mayo isnt hard after coming out of the fridge. I guess you didn't use the egg white in the mayo. Something else you folks should show is how to make Ghee so that folks can buy butter in bulk and have it shelf stable. Thanks

      It is pretty hard straight out of the fridge. I usually leave it out for 5-10! minutes and then give it a good stir. I came up with this bacon mayo that IS spreadable right out of the fridge: ruclips.net/video/ATjZqrafUkg/видео.html

    This has a great flavor but how do you keep it spreadable once refrigerated?

    Vitamix blender. They are expensive but powerful. Used in professional kitchens and have a 7 year warranty.

      I have a Cuisinart. It works perfect, but a lot of people have the same one and have trouble. I think the blender is just easier until you get the hang of the immersion. I had a lot of people message me about my Duke's Mayo video and Dr. Berry had problems with his too.

      I'm sorry if they aren't working for you for some reason. I make at least one of them once a week and they turn out fine 🤷🏻‍♂️ I use an immersion blender on mine, but on this particular recipe I want to show people how to make it a different way.     Ninja Blender (mine doesn't have the grid I use funnel w paper towel wrapped around it to reduce spatter.
    1 egg / per cup oil ( Olive, Avocado, i sub a bit of these too.-->Pumpkin Seed, MCT, )
    1 Tbspn GOOD lemon juice ( can use vinegar, apple cider of course;-))
    1 Tbspn mustard.
    Healthy pinch salt
    1Cup Oil
    I found key is blend lemon and egg & salt FIRST, like making ceviche, the lemon chemically "COOKS" the raw egg, THEN
    add the other stuff...
    DRIZZLE OIL in...
    I am now going to substitute a cup of bacon grease in the mix.. I usually make 4-5 cups oil worth. Fills mayo jar..
    Also: I have added Minced Garlic, Dill, Pepper, All good stuff, but NOW BACON grease, I can't wait to try.
    NOTES: WASH ALL EGGS... liquid is what makes it too runny, if adding other stuff squeeze out as much liquid as possible. The bacon grease will now also help make it more solid, and goooood.
    Avocado. I found an Olive oil mayo on the shelf, read the ingred. aaaand, it had less olive oil than SOY oil.. sheesh what a scam.. Healthy eating folks..

      Wow! Some good tips there! I like the grid on on mine, but I have broken all the plastic shields, thus the paper towels 😂 a bacon grease makes it nice and thick, so you could add more liquid if you want to also.
