    Your Own Blended Pork Sausage and Fried Eggs

    Yield: 4 to 6 servings
    Ingredients
    1 pound ground pork (lean but not too lean)
    Kosher salt
    1 teaspoon chile flakes
    1 teaspoon fennel seeds, toasted
    1/2 teaspoon cayenne pepper
    1/2 cup breadcrumbs, toasted
    1/2 cup finely grated Parmesan
    1 tablespoon canola oil
    2 to 4 tablespoons unsalted butter
    4 to 6 eggs
    Directions
    Put the meat in a large bowl and mix together with your hands. Add a good pinch of kosher salt, the chile flakes, fennel seeds, cayenne, breadcrumbs, and Parmesan. Mix to blend and then form the meat into small 2-inch patties.
    Heat the canola oil in a large skillet over high heat. When the oil begins to smoke lightly, shut off the heat to avoid splattering, and add the meat patties in a single layer in the pan. Take care they are spread somewhat apart so they have a chance to brown instead of steam. Put the heat back on high and brown them, turning them so they brown all around, 3 to 5 minutes on each side. Touch them to make sure they are still tender and somewhat yielding in the center. Use a slotted spoon or spatula to remove them from the pan. Transfer the patties to a platter or individual plates.
    Use a kitchen towel to wipe clean the skillet, put the heat on medium, and add the butter. When it begins to brown, crack 2 eggs, a distance apart, into the butter. Lower the heat, season the eggs lightly with salt, and cook 2 to 3 minutes or longer, if desired. Repeat with additional eggs. Put the eggs on the patties and serve immediately.

      I like my eggs over easy, but I can understand why people like sunny-side up. They look more appetizing and less chance for breaking the yolk

      A lot of people keep saying you can cook pork like beef now for example a pork chop grilled medium...but im with you I'm staying old school if its pink i dont want it.😁

      That is the slightest hue of pink -- completely normal and appropriate. Meat is not supposed to be gray!

      @@Thompers i love a nice med rare steak.. but the pink pork freaks me out even though my butcher keeps saying it is ok i just like to fry golden and crispy especially for green chili or pork and avocado burritos.

    Looks delicious but could u use ground turkey or chicken instead of ground pork for the sausage and I believe that this sausage will be a bit healthier than pork!

    Homemade Pork Sausage requires a recently dispatched pig, whole pieces, a meat grinder attachment on the Kitchenaid/stand mixer, etc., trim off almost all visible fat (for health reasons), grinding the pork, etc.
    If you want links, must have the entire pig intestines' sheath, properly sanitized or order the synthetic product... etc.
    Ask any farmer who raises pigs for the freezer, takes them off live in the trailer for dispatching at the processor's while they wait and/or come back in a few hours or days, etc...
    Trying to keep the YT numbers up to maintain monetization? Got it, but this is not Homemade pork sausage.
    This is: Go to the grocery store, buy a few pounds of ground pork, toss in a few herbs/spices to taste, and pass it off as homemade sausage.
    Just saying... 😭
