You should come to Beaumont, Texas Patillos Barbecue is the oldest black owned family restaurant in Texas. It’s been in the same family since it opened in 1912.
I live in Kingsland, TX - exactly 22 miles from Llano or Burnet. I have my choice of several very famous and renowned BBQ places, but will drive out of my way to go to Opie's Barbecue in Spicewood, TX on Hwy 71. Be sure to try the baked potato casserole. Though, if you really want to know all about Texas BBQ, you've got to go to one ore many of the random "Cookoffs". My bro-in-law has won Grandmaster of many, along with countless awards.
Interesting. There us so much more out there. One of my favorite pass times is following Texas Monthly and their BBQ picks for the year and visiting these locations on a road trip. I am 5th generation Texan and I chose to settle down in Chicago. While Chicago has so many food options, one thing that really lacks is Texas BBQ. There is one place however on the Northside, called Smoque BBQ and I instantly clicked with this place because of their sausage. Growing up in Austin, and frequenting that Southside BBQ among others like Black's Original, Cooper's, Terry Black's, Louie Muellers, Davis Grocery & BBQ, etc, most of these places used to get their sausage between Elgin and Taylor. This joint in Chicago also buys their sausage from Taylor. I bit into it and instantly knew the flavor and where it was from. I was so shocked, I was in disbelief and had to ask the staff where they buy their sausage and the staff told me it is sent up from Taylor TX. Blew my mind all the memories that it triggered. So if you're ever around the way in Chicago and you get a hankering for BBQ that is the place. Although, I'd recommend you do an episode on real Chicago pizza (TAVERN STYLE) and youll be thoroughly pleased to find deep dish is occasional but tavern style is where its at for Chicago Pizza. Every tavern, pub, bar, etc usually has its own recipe from dough to sauce, and there is a bragging rights battle across the city for the best tavern style. My personal favorite is Phil's on 35th.
I'm a native Texan and we can tell if it is going to be good BBQ just by the smell. You mentioned that outside of Coopers. Texas BBQ is more how it's cooked than sauces. You can't beat good old salt and pepper.
Coopers is good but the Windmill BBQ in Arora, TX and the Salt Lick in Buda, TX are the best! I did love that you went to Elgan, that was my father-in-law's favorite place to get sausage. ❤
