    DAL PAKWAN
    Preparation time 10-15 minutes
    Cooking time 35-40 minutes
    Serve 2-4
    Ingredients
    For Boiling Dal
    2 cups Chana dal, soaked, चना दाल
    Salt to taste, नमक स्वादअनुसार
    ½ tbsp Ghee, घी
    2 Green chillies, less spicy, हरी मिर्च
    5-6 Black peppercorns, काली मिर्च के दाने
    3-4 cups Water, पानी
    For Dough
    1 cup Refined Flour, मैदा
    1 tbsp Semolina, सूजी
    Salt to taste, नमक स्वादअनुसार
    ¼ tsp Cumin seeds, जीरा
    ¼ tsp Carom seeds, अजवाइन
    1 tsp Oil, तेल
    Chilled water as required, पानी
    ½ tsp Oil (after kneading) तेल
    For Green Chutney
    2-3 no. Green chillies, हरी मिर्च
    1 inch Ginger, peeled & cut into sliced, अदरक
    ¼ cup Mint leaves, पुदीना पत्ता
    ½ cup Coriander leaves, धनिया पत्ता
    1 small raw Mango (peeled & slice) कच्चा आम
    1-2 tbsp Jaggery, गुड़
    1-2 tsp Oil, तेल
    A pinch of asafoetida, हींग
    ½ tsp Dry mango powder, अमचूर पाउडर
    Salt to taste, नमक स्वादअनुसार
    For Tempering
    2 tbsp Oil, तेल
    ½ tsp Cumin seeds, जीरा
    1 Green chili, chopped, हरी मिर्च
    ½ inch Ginger (peeled & chopped) अदरक
    2 Dry red chillies, सूखी लाल मिर्च
    1 tbsp Tender coriander stems, धनिया के डंठल
    ½ tsp Coriander powder, धनिया पाउडर
    ½ tsp Turmeric powder, हल्दी पाउडर
    ¼ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
    For Finishing Dal Pakwan
    1 cup Warm water, गुनगुना पानी
    Salt to taste, नमक स्वादअनुसार
    A pinch of dry mango powder, अमचूर पाउडर
    3-4 tbsp Ghee, घी
    Other Ingredients
    Oil for frying, तेल तलने के लिए
    For Garnish
    Coriander sprig, धनिया पत्ता
    Green chutney, हरी चटनी
    Tamarind chutney, इमली की चटनी
    Onion & tomato salad, कचुम्बर
    Process
    For Boiling Dal
    In a pressure cooker, add chana dal, salt to taste, ghee, green chili, black peppercorns and water.
    Cover it with a lid and cook it for 3-4 whistles on moderate heat.
    keep it aside for further use.
    For Dough
    In a parat, add refined flour, semolina, salt to taste, cumin seeds, carom seeds, oil and mix it well.
    Add water and make a smooth soft dough, cover it with muslin cloth and keep it aside for resting.
    Apply oil onto the dough and knead it well.
    Divide the dough into small lemon size balls and roll it in a thin roti.
    Dock it with the help of fingers or fork and keep it aside for further use.
    For Green Chutney
    In a tray, add green chili, ginger, mint leaves, coriander leaves, raw mango, jaggery, oil, asafoetida, dry mango powder and salt to taste.
    Transfer it into a grinder jar and grind into a smooth paste.
    Keep it aside for further use.
    For Tempering
    In a small pan, add oil, once it's hot, add cumin seeds, green chili, ginger, dry red chilies, coriander stems and saute it for a minute.
    Add coriander powder, turmeric powder, degi red chili powder and mix it well.
    Pour the tadka onto the boiled dal and mix it well.
    For Finishing Dal
    In a kadai, add prepared dal, warm water, salt to taste and cook it for 7-8 minutes.
    Add dry mango powder, ghee and mix it well.
    Transfer it to a serving bowl and serve it with prepared pakwan, green chutney, tamarind chutney, onion & tomato salad.
    Garnish it with coriander sprig and serve hot.
    For Frying
    In a shallow kadai or pan, add oil, once it's hot, add prepared rotis and fry until golden in color on both sides.
    Transfer it to an absorbent paper and Keep it aside for further use.

      I am from Hyderabad sindh Pakistan this video reminded me of my school one hindhu sale daal pakwan oh i love his daal pakwan everyday i save some pocket money to buy this because it was bit expensive but he gave red chatni i don't what you call very yummy 🥰

    Being a sindhi and a regular viewer + subscriber of Ranveer. Over the times I've realised that if you want to cook something traditional of a culture, Ranveer's ingredients are always friendly to what is kept in Indian households and he beautifully explains the culture and tradition of whatsoever dish he's making. Masterchef's fav judge and Best chef in my eyes :)

    Sindhi cuisine is the most unknown cuisine in India, from their Bhee Ki Subzi, to Sai Bhaji, to Sindhi Kadhi(yeah, it's different than all Kadhi versions you'd get your hands on), to their Aloo Tuk, I'm obsessed with them.
    Sadly, my Sindhi friends all have moved elsewhere to other cities so, I don't get to be their guest anymore.
    Nagpur has a massive Sindhi enclave known as Jaripatka, geez, man !

    Dear Chef, I know you are flooded with great comments, people worldwide cherish you.
    But i just wanna thank you for being a part of how you influenced my survival.
    I really dont know if you will read this text, but it doesnt matter. I did my bit.
    Few years ago my wife decided of going separate ways, and very abruptly she told one day that she wont cook for me anymore. Knowing that i am a foodie but my wekaness is home food, it was very dificult for me to manage then.
    I would eat outside food but wouldnt even finish the plate as some would put more salt, some more oil etc, rest would make food only t sell.
    I went 3-4 days without eating proper food and would wake up middle of the night crying with hunger.
    On the 4th day at night time i was just scrolling facebook and a friend of mine had shared one of your videos.
    I had tried watching a lot of other videos but all of them i found dificult to follow as i never cooked anything in my life.
    My wife know my weakness.
    I dont know how and why i clicked on your video and i saw it entirely, i found your teaching so easy and so simple, that it inspired me and gave me that strength, and i said, hey i can make this, this sounds easy.
    I dont remember which recipe was it, but that doesnt matter as all your recipies are so easy to follow, you just make it sound so simple that anyone can make anyone your recipies. HATS OFF TO YOU CHEF. MAY YOU POSPER ALWAYS IN LIFE & MAY YOUR FAMILY ALWAYS BE HAPPY. I AM NOT ONE TO BLESS YOU, BUT APPKE LIYE DIL SE DUA NILKALTI HAI KE APP KHUSH RAHEN.

    I am residing in the UK currently, but the moment i watched this video and reels related to this. I cant express how nostalgic i felt. I felt like i want to go back india immediately and eat my mom hand made dal pakwan.. i cook many sindhi dishes here and treat my friends but i really miss the feel of being at home, sitting with family, eating dal tikkad, sindhi tikki and drinking lassi. I have plan to start a cloud kitchen here and i am looking forward for more such awesome videos. I love you and thank you from all Sindhis all over the world. No one would had introduced our food culture the way you do. Really I watch master chef and call my mom and discuss that what sindhi special dishes are cooked and your comments.     Ranveer Hi! Just mind blowing. Whenever I reach India in two days time I eat this as I have number of Sindhi friends. I am saddedend now and missing India and this food.     I am Marathi grown up and educated in Ulhasnagar. I love Sindhi food. We Marathi in Ulhasnagar have sweet n sour relationship with Sindhi people. But yeah we have been coexisting for many decades.

    Thank you for keeping our sindhi tradition alive.now i am using wheat and maida combined.and i use same cooker.lockdown made me resume dal pakwan after many years.loved the history .l miss my papa he makes delicious dal pakwan mummy too .and living far away from them i make them when i have enough time.
