I basically just sit back and ask myself what I currently have to cook with and go from there. Just happens a lot of folks who follow me have the same things piling up lol. 😂
This is a phenominal idea to put all those wonderful flavors into an egg roll wrapper! I imagine the leftover filling also would have been yummy in a flour tortilla & cooked as a quesadilla or even a street taco/mini burrito. We don't have a fryer perse, but we have the giant one for turkey frying that we could use for a monster batch, so the option of making these and freezing them until ready to cook is a good one. Also thinking that if they're fried until just before they're actually ready, drained and cooled and THEN frozen, they could be baked or tossed in a toaster oven until brown and heated through later. But now I have lots of ideas - Burritos are often too big for me to do as breakfast, but something egg roll sized might be perfect! (LOL a literal egg roll maybe!) I was serious when I said I wanted to make some in advance. All different kinds, your idea to par cook them would probably taste a lot better than flash freezing them raw. Thank you for the idea! I think you could put just about anything in these wrappers and it would be delicious lol.
Jen, I made the eggroll poppers last night. I used ground turkey sausage, cream cheese,jalapeños and onion only. I air fried them, and they cooked well. They were delicious. TFS

We actually made some Thanksgiving leftovers (like turkey and all the fixings in one) egg rolls a couple of years ago. They were phenomenal!

I am going to make them with black beans, grilled chicken and corn next lol. Maybe make a chipotle dipping sauce. Should be good.
