Looks delicious, love the tip on how to get the arils out of a pomegranate. Used to make a similar dressing, used evoo, red wine vinegar, honey, and minced garlic with a touch of S&P. 💚
That dressing would be wonderful on this. Next time I make it I am going to use Balsamic instead of ACV. I am super curious how that would taste lol.

It's so easy that way! When you bang it with a spoon they go everywhere and get smashed (and make a terrible mess ). I want them intact lol.

When I was about 19 my mom made Cornish hens for Christmas. We each got one. It was so fun! I might do this for our Christmas this year using your recipe, I love lemon and chicken together!
I used to make them for my kids when they were little. They loved pretending to be cavemen and just eating them with their hands LOL. They still love them, though now its more knife and fork 😂. They really are delicious and the citrus just brings it over the top flavor wise.
These little game hens look absolutely delicious! I can imagine any citrus would work in place of the lemon, making this even more versatile for flavors. I'm thinking like a less expensive Duck a l'orange... YUM! Thanks so much for sharing, Jenn!

We grew cucamelons in 2023 and had plenty of volunteers this year. I learned that when they grow enmasse (volunteer-style groups), they don't seem to produce as well for us. Now, it just might have been a not-so-good growing year for us in general, but next year's volunteers will get a thinning so maybe we'll have better fruiting in 2025. Even in repose, your garden is beautiful and HOORAY for all the potential flowers for next year! I always struggle with getting flowers and herbs planted at the right time, so volunteers will grow when it's (mostly) the right time for them and that will give the native pollinators something delightful sooner in the season maybe. But anyway - thank you for sharing the garden bedtime and the playful cats. (BTW Shark shoes are fun!)
If I do keep any of the cucamelon volunteers I am sure I will have to thin them. I want to train then to the outside fence since it seems nothing bothers them. Easier to pick them and easier to keep them out of the walkway lol. I am all about volunteer flowers. My borage this year was everywhere and I planted it in ONE spot the year before. I know borage and catnip can be sort of invasive but with having the plastic down in the walkways it is pretty easy to get a handle on it when it pops up somewhere I don't want it. The bees absolutely love it too so that is a plus.

Jen your garlic should be fine. I planted 100 cloves of garlic from heads I grew year before and they all came up again this year. This is my 4th year of growing from my own crop I did not buy from seed company, my friend gave me some heads from the beginning he grew and it’s been very productive ever since. I’m sure yours will be great too. Just save your biggest heads and plant those - you will have garlic every year. Good luck to you and thanks for sharing ❤
I tried to save the biggest heads but this year just did not do well. I had a LOT of really big heads that were harvested but they just didn't cure well and rotted. Disappointing but that's alright. Try try again lol. I planted about 60 cloves, so if only half make it I will still be happy with it. The first year I did garlic I grew 97 heads lol. I was giving it away I had so much. Fingers crossed next year will be a good garlic year. ❤
I love casseroles, this look delicious Jenn! I bet if someone was watching carbs/gluten they could use crushed up pork rinds for the topping? I agree that this would be amazing using other squashes if yellow squash wasn't available. I've often mixed yellow squash and zuchini 50-50 to soften in chicken broth or veggie broth and eat with just a little butter/garlic/salt as a side, so this is definitely a glorious upgrade on that hahaha. Easy to turn into a main dish by adding browned ground whatever or even kielbasa/sausage sliced nicely (I always pre-saute mine for casseroles to get extra oil out and get a nice lil crispy texture on them). 💚
You 100% can sub pork rinds for the topping. I used to do it all the time when I was Keto lol. The kielbasa sounds SUPER yummy! I may have to do that next time and just make a meal of it lol.

I think this would be really good as a main too. Especially when the squash are coming out of the garden in plenty lol.
Was this a main dish or more of a side dish? I have a recipe (can't remember what it's for) that uses panko crumbs, parmesan, and butter. That's a good crust.
This was just as a side dish. You could easily turn it into a main though lol. I love Parmesan topping lol

I don’t have a steam canner or know much about them. I would imagine the answer is yes because if I am not mistaken water bath and steam canning are interchangeable .

These look really good. I think I might try some with some folded scrambled egg instead of bacon and see how they turn out. Since our asparagus really "pops" in the Sprintime when our hens ramp up laying eggs. LOL

Far as my garden goes this year, I didn't really step out of my comfort area at all. I grew what I've been growing for years and I kinda made it simple. I grew lots and lots of tomatoes and peppers and attempted to grow a few in ground crops, but they failed miserably. Far as the tomatoes go, they have already been pulled out of the beds and I'm working on my 4th pepper harvest. Yes, I said that right. 4th. Next year, I'm considering growing more tomatoes, but I really missed our squash so I may try to plant some of it. But I also want to try and grow these new Watermelons I attemped to grow back in the spring in the ground bed that didn't do so hot. I try not to give up so easily just because I fail to get a good harvest. But I also tend to do more and more research on why it failed and test new ways. THAT's why it took me 4 years to grow a good crop of Pak Choi. I may try to grow some of it before it turns too cold to germinate the seeds.
It is always so interesting to see what grows and what doesn't in our gardens.I’m going to have to sit down and formulate a solid plan for next year but I have several new things I’d like to try.
I didn't have a garden this year. I have seeds coming from MIGardener. I need to get my garlic in, but I've been concerned with how warm it's been.
That is part of the reason I haven't gotten mine in yet. Every time I say OK it's time, it gets so warm again lol.

I'm so happy for your beautiful and productive garden, Jenn! I share your glee at finding ripe produce wherever it is found in our garden, too. Lessons we learned this year is we have to plant our pole beans earlier in the season so they'll hopefully be "done" by the time the kudzu beetles are out in force - Our Asparagus Bean/Noodle Bean harvest was severely impacted by those vermin. (They not only covered every centimeter of the plant and beans, they left behind chewed spots and nymphs to do further damage...) We learned we DO have an upper tolerance for cherry tomatoes, so we'll not grow even half as many next year. And we learned that not only do okra grow well in 1-2 gallon buckets, but when grouped together, they support each other to keep them all from falling over. Oh yeah - we also learned that we LOVE Tromboncino squash! Even when there were all kinds of typical squash pests, the Tromboncino seemed quite unbothered... We planted them after the danger of frost was passed and STILL have at least one vine blooming, setting, and growing fruits! Every year, we try at least one new-to-us variety of plant and this year was a bunch of things we'd never grown before... But since many went to seed, we are certain to have many more flowers and herbs next year. LOL
That is a lot learned! Heather and everyone else keeps saying that I should try Tromboncino. I am going to have to pick up some seeds and find a worthy place for them. My fence is pretty rickety lol otherwise I would just let them have the fence around the garden. Pretty sure I am going to have about a million cucamelon volunteers, plenty of spoon tomato volunteers as well as some ruby monster tomatoes lol. If I can dig them out and move them I sure will. I pulled a TON of catnip today that was growing here and there and saw 5 borage plants trying to make a go of it this late in the season. Volunteers are kinda crazy lol.

I'm sitting here trying to figure out if they would be good with a poached egg on top lol. That just sounds so good to me, maybe with a hollandaise sauce. It would be messy but I bet it would be ridiculously good for a brunch lol.

It was really good. It was super thick but when stirred it had a nice consistency. You could scale the pectin back a touch for a runnier jam. It was DELICIOUS!
