Dish soap, because of its bipolar characteristics (nonpolar on one end and polar on the other), weakens the chemical bonds that hold the proteins and fats in solution. The soap's polar, or hydrophilic (water-loving), end dissolves in water, and its hydrophobic (water-fearing) end attaches to a fat globule in the milk. This is when the fun begins.The molecules of fat bend, roll, twist, and contort in all directions as the soap molecules race around to join up with the fat molecules.

I did this experiment in my university biology course while studying chemical engineering. Obviously had to write a pretty detailed report on the interactions going on. But if you think this is a waste of time, then I suggest you take some general science courses.

I am Big Sister (Big Brothers and Big Sisters) to an 8 year old Little Sister. We tried this today and it was a total fail. I'm guessing it is because I used lowfat milk, which is the only kind I buy?
Heavy cream or half and half is even better. The higher the fat content the better. A clear shallow dish is better because you can also view what is occurring underneath. Also it works better if you add the food coloring at the edges of the dish. Imagine a clock add one color at 12oclock...3oclock...6oclock...9oclock. When you add the dish soap you can do like so in this video with a cue tip. Or you can just squeeze a drop in. However, unlike this video it worked better for me when I dropped it directly in the center of the dish away from the food coloring drops on the edges.
I was watching this video for science ideas and when it ended my 6 year old was like "can you turn that great music on again?"

Yes you need to use regular milk because it needs the milk fat in it to work properly
