- This week we're making super delicious Thousand Year Old Eggs with Tofu and Chili Oil with Top Chef winner and Met Gala chef Melissa King! We’re showing everyone that Thousand Year Egg aka Century Egg is not a weird delicacy but a delicious comfort dish from our childhoods. Thousand Year Old Egg was seen as a “challenge” on many tv shows, like Fear Factor with Joe Rogan, but I eat this for breakfast!

I’m not of Asian background but I have always loved thousand year old eggs and I like them on their own as a side dish. Love this recipe with the egg,fu, cilantro and chili crisp, a lot of my favorite things.

For anyone who wants to try but may be overwhelmed by its ammonia smell( which comes from the breakdown of the egg protein during the alkalic preserving process), just drizzle some vinegar on top. That's how I ate it growing up. Literally two ingredient: vinegar and century egg. Super easy and super delicious.
If it is still too much, just dip them in vinegar...
Having them with Japanese Ginger pickles is amazing too. The sharpness of the ginger pickle blends very well with the fermented smell. ~
@@boinboing1787 That's how our family eat it plain, a bit of pickled ginger.
Yucheng Zhu at least use a Chinese vinegar, like rice wine vinegar or black vinegar or even fresh lemon. Basically you're adding acid. But then also add soy sauce and chili oil.

WOW !! This is my favourite Chinese salad when the weather is hot. Thank you ! Now, to make it “Californian”, I add diced avocado in it - less the meat floss, which is so delicious on its own. I hope you like the addition of avocado here.

We Thais sometimes eat the eggs fried with pad kaprao and crispy basil, just another way to make a simple Thai dish for you guys.
Also, fun fact: we call them Kai yeow ma, meaning horse piss eggs.

I love this so much! This dish reminds me of my childhood. Thank you for representing Cantonese Americans. Jimmy, what do you think of doing dedicated content that brings on Cantonese American guests? In scripted roles and general media, “Chinese” is treated as such a monolith, and the “mainstream” identity tends to be Mando-leaning in recent years. No hate (I’m half Mando half Canto) just would love to highlight Canto Americans in media. Melissa is awesome! I’m gonna go make this dish now.

Yes, we do user scissors to cut green onions, we only buy LKK brand oyster sauce (don't buy the one with the panda), we grow our own green onions 🤣, we cook very hot oil n pour on steamed fish🙌

I love this rendition of 皮蛋豆腐, I always make it as a 凉拌菜,a cold appetizer. I use soy sauce, sugar, garlic and mostly importantly fresh chopped小米辣,or Serrano peppers. My kids find that too spicy, so I’m eager to give this version a try! It might be a little more kid friendly!

Two things it makes me think about: you're so into cooking, please have a chef improving your knife skills, like how to grip and handle a knife properly. Will go a long way! Second, about wine pairing/culture. Get your hands on what I humbly consider the best encyclopedia for wine, the "Drops of God" Manga. Yes, a Manga. But such an incredible one! And it funnily covers which wines to pair whith spicy asian food ;)

OMG.... I died about the scissors. I remember watching my aunties sit there on a milk crate, cutting veggies into a beer flat with a big ass pair of metal scissors... I miss my family so much...

I love Chef Melissa. Both of her seasons on Top Chef was pretty amazing to watch. I will fight anyone about this, but the second All Stars season was way more intense than the first one. Also that’s not silken tofu. That’s like soft tofu at best lol.
