Discovered this excellent cooking channel today and subbed (a rare honour - I don't give my subs out easy!) I'm English and discovered the wedge salad on a trip to New York around 25 years ago. Here in the UK, iceberg lettuce is looked down on as the cheap and cheerful, tasteless McDonalds garnish it's so frequently thrown away on. We Brits tend to favour posher leaves like romaine, little gem and rocket. But for me a salad base is more about texture than taste, so the much maligned iceberg lettuce (no flavour but unsurpassed for crunch) is my personal favourite, and the wedge salad is a dream. I found this video invaluable, and will now be attempting to make this novelty dish at home as a starter, side or light lunch. I was never sure how to prepare the lettuce itself and now feel foolish, as you showed it couldn't be simpler - it's just a quartered lettuce FFS (your coring technique is unsurpassed). Iceberg lettuce is the perfect foil for rich, strongly savoury flavours and textures, so a creamy dressing and fried bacon bits are perfect, as would be other robust accompaniments like anchovy, garlic and - oh, I'm not sure off the top of my head, but I'm sure as hell going to investigate now my iceberg passion's been reignited. Oh, I absolutely love iceberg lettuce! Especially as it appears in julienne fashion in Greek salads at my local diners. They say it is not nutritious ... but it feels like a superfood to my body. I think it is filled with vitamin K. Whatever is in it is something my body needs. Love the history you shared about how iceberg lettuce got its name!

I don’t remove the core, cut into 1/4’s, put on a plate into the freezer to chill & firm up, then cut out the core and dress. I like 1000 island, toppings whatever you like. Good stuff 👍

( Real thousand Island is made with sweet chili sauce, pickled beets , funky minced onion, funky chopped hard boiled eggs, and cornichands [those tiny tart, sweet, briny pickles] Mixed with mayo and a dash of worchestireshire sauce.) There is NO KETCHUP in REAL Thousand Island Dressing!
I love the Outback Steakhouse Wedge Salad, but the one thing they add to theirs that I haven't been able to replicate is a Balsamic Syrup. I say syrup because it's thicker than the typical vinaigrette, but it definitely adds to the flavor profile. Any idea for how I can make it?

I can always tell when iceburg or romaine lettuce have not been washed and I find it tastes like sucking nickels. I can even just smell it and tell. Just me?
I have good luck washing when you cut the head in half. Then drain on towel in the fridge so it's really cold. After draining make the quarter cut.. Keeps it from falling apart too easily.
