    I’ve had a grain mill now since 2017 & have yet to use it. This video has been incredibly helpful, thank you so much for breaking it all down. I now know so much more & 2024 is the year I break out that grain mill. I always watch your ads but this video definitely deserves for the ads to be watched!     This was an awesome primer. Thank You!! We are a gluten and gluten free household. I have 2 learn both and need 2 mills because of cross contamination. None of this is easy, and it's totally worth it.

      We were too... the gluten free person is me due to non-celiac gluten reactions (I tested negative for celiac, but after 3 food challenges, everytime we include modern wheat into my diet I have a severe flare of eczema, abdominal bloating, GI issues, and joint pain). I only recently discovered Einkorn as being well tolerated by people that are gluten sensitive, but non-celiac. I bought a small amount to test and remained symptom free!! I have now changed all my recipes to using Einkorn, and only buying and storing Einkorn (by not storing multiple types of wheat, I can put those budget dollars to buying the Einkorn since it is a little more expensive - but if that is my only diet option, it's just what I will have to do, and the rest of the family likes what I make with it so no more cooking separately). If your gluten free family members are non-celiac, maybe this might be an option!?! Wishing you the best!

      Bluebird Grain Farms in Washington state is a very good source for hard red & white & soft wheat, einkorn, emmer, spelt, & rye berries. The grains are high quality and very clean. They are a bit more expensive than some other sources, but they only charge $9.99 shipping no matter the size of your order.

    I’m in absolute kinks laughing because it’s yet another method of measuring and calculating and things to consider when baking/cooking and your information is going to be extremely valuable to so many! I’m laughing because I grew up with the imperial system of measuring, and then metric came along and yet most recipes call for the old system, THEN there’s European measurements in ounces and weight thanks to the internet 🤣🤣

    Great video! My mom milled her grain and made the best bread. I honestly dont have time to practice but my health demands that I must,and maybe the slowing down is the biggest reason to do this. ❤

    These are great tips! I have not used a scale and that is probably a big reason my recipes have not been successful. I really appreciate the vocabulary as well. I have been a bit afraid to try sourdough but I'd love to learn! Thanks, Jaylea!

    Thank you so much Jaylene. I happened upon your channel after asking God to show me why so many w food sensitivities n bloated bellies and digestive issues. And whats up with bread since everything He made is good Your video on homemade mixes came up on my youtube feed and i was lead to watch and i dont bake hardly cook. Lol. Then I watched your unboxing video of your grain mill n I was what is a grain mill? When I heard you say that “Sue Becker revolutionized your life”. I thought that’s a powerful statement. How did she revolutionize your life so I looked her up WOW! I was blown away with “the truth about wheat, the staff of life and Only Real Bread. I binged watched her videos. Then i started watching videos on grain mills. I ended up going with the WinderMill that Sue Becker recommends and then for Christmas I got my beautiful Ankarsrum mixer n the Zorijuchi Bread machine. I have my first co-op order arriving this week. I’m so excited I started out with 2 pounds of a few different wheats and made some muffins rolls and pizzas for my granddaughters. They love it thank you so much I know it was the Lord that lead me to your channel. Blessings

      BTW great video. Explaining the volume issue was great help. Oh my gosh thank you i would love a measurement conversion chart. I’ve never used a scale and I’m finding it. I’m having trouble even using the scale because the numbers change every time I left the item up and put it back on, but I’m pressing on. Lol

      Oooh smart! I have the same issue. I turn my oven on for like 60 seconds, turn it off, and stick my bread in there. That usually does it.

      Great! It takes some getting used to but don’t give up. Keep trying different recipes and you’ll find what you like.

    I am waiting for my mill to arrive and watching lots of videos on the topic. I saw one that stated freshly milled flour is a little thirstier than store bought flour as the bran and germ want water. The advice given was to add an extra quarter cup of liquid per cup of flour when following a recipe designed for store bought flour.

      It is definitely true that FMF is thirstier! I don’t have a specific amount of water I recommend adding. Personally, I can tell most of the time if a recipe is looking too dry and add a little more water as needed.

    Do you know if you can grind your berries frozen? I have a Komo mio on the way and I’ve been storing my berries in the freezer and adding small amount I grind with my vitamix.

      From what I’ve seen and heard there shouldn’t be any need to freeze berries since they should be shelf stable for a very long time. What I was wondering was why couldn’t you freeze your freshly ground flour to preserve the quality and nutrition if you happened to grind extra, or you wanted to share it with someone?

      @@kathygreer2097I always put my berries in the freezer for a few days to kill any bugs or eggs that may but in there. Personally, I don’t keep them in the freezer but perhaps it’s the only storage space the original commenter has. You are correct that freezing the milled flour helps preserve the nutrients. I have a good friend who does it that way. Again personally, I enjoy milling on demand. Do what best suits your needs!

    I just made shortbread cookie bars without adjusting my amount. The hard white wheat was my favorite over my soft white, but still excellent. It goes like this. This is fine castor or baker's sugar. Sugar = 1/2 the amount of butter. Flour = the total weight of butter + sugar. I used 200g of butter, 100g of sugar, 300g of fresh milled flour (hard white or soft). 1 1/4 tsp salt. 1 tsp vanilla. cream butter & sugar together and then add vanilla. Stir in salt with the flour and add to the butter/sugar mixture. I roll out to 3/8 inch tall rectangle and surround with an adjustable mold for baking on a cookie sheet with a silicone mat. Baked at 320F for about 30-35 minutes depending on thickness of dough.

    In my country there is no store selling grains. Only from super market and from low quality. But they sell grains for beer fermentation. Can I use those grains for bread?

    If you have to use regular flour and bread flour , sift your flour before you measure , it fluffs it so its not packed. I make yeast breads cause I am not a fan of sourdough, to me it just has a not so good taste to me, but that's just me I guess.

    I got some hard red wheat berries and first time we tried baking with it we found it wouldnt rise. yeast was fresh. wheat berries were perhaps abit older. who knows how long they were stored. perhaps if i could get some trouble shooting as to why? was it too coarse. had it set for factory setting and it came with a small sample to show it. (Country Living Mill)

      It’s hard for me to know for sure but there’s two things I’d say. Freshly milled flour is much denser. Did it not rise at all or just not as much as you were expecting? And second, if the flour was a bit on the coarse side that would only further reduce your rise. Maybe try setting it to a finer grind and see how it does.

      @@faithandarrowhomestead it did not rise much at all. the bread was really heavy and dense. i just ground some more yesterday and set it as fine as it would go. try it again. perhaps the recipe was wrong too. Trial and error.

    Brilliant video. I've been on my FMF and SD journey for a couple of years but am still learning. You covered so many bases in your video; you're a thorough teacher. Thanks. Question tho, I only once tried the cold overnight proof, and the bread was too sour for my taste. It would be ideal to do it this way because it's too hot here to bake in the p.m., but is there a way to avoid over-souring? Maybe I should put this question out to FB, as you suggest.

      Are you hoping to bake in the am then? I would suggest starting the bread in the evening, doing your stretch and folds before dinner, letting it sit out to rise for 2-3 hours before bed and then popping it in the fridge. Decrease the overall time the bread is fermenting. You just have to tweak your schedule until you find what works for you :)

      There is a lot of information about freshly milled flour and blood sugar. You need to listen to Sue’s Healthy Minutes podcast episode 34: real bread and your blood sugar. I listen on Spotify but if you don’t have a service it’s on their Bread Beckers website for free. That should help you.

    That is the reason you don’t just scoop out the flour. You are supposed to fluff the flour up and spoon it into your measuring cup and level it off.

      I can’t say for sure because I haven’t tried it myself but I did try to grind it using my ninja smoother blender and it did not work. I know the Vitamix is really powerful though so if you have any wheat berries, just give it a shot!

      I know they sell an attachment or a blade for the vitamix that is especially for grinding grain so if it doesn't work with your regular blade then you could check it out.

      Another blogger showed bread with vitamix and her mill. She said it just takes longer, but there wasn't much difference in the final product.

      You can totally use a Vitamix. It’s just slower because you can only do 1-2 cups at a time. I started with my Vitamix to make sure I would stick with grinding flour / bread making before I committed to buying a mill.

    I think some people just listen too slow (yes, I do talk too fast, faster than you do). Have you tried the red, white, and blue corn varieties yet? If so could you tell a difference. I think we like blue Ohio better than bloody butcher, but have not done a side by side comparison. Have not tried the Hickory King white yet.
