@@user-bi4os7yr1q Hi Man, it's Mike Florence and thanks for your comment. Yep, I'm a seafood chef and a real supporter of Joel's channel. To answer you, I recommend using HAKE which is a white fish. It's delicious and a good alternative to using COD. Hope that helps. See Ya, Mike.

Yes you can, but as Hollandaise is a rich sauce, it works better with less oily white fish. Enjoy!
....I'm pleased to see Chef Joel has replied to your query....as I was going to do so.... the Hollandaise works best with most types of White Fish ...the sauce and fish complement one another beautifully. Salmon has a " richer taste ", as Chef Joel stated, 😊.... and Salmon with Lemon, Dill, a bit of butter and cracked black pepper....delish. Simple ,easy ...allows the taste of the Salmon to be throughly enjoyed.
