Each instrument kind of has its own brand of difficulty. For organ and drums, it’s four limb coordination. For guitar, it takes most people months just to play a few notes clearly and convincingly, let alone with speed and feeling. Reed instruments are a whole other can of worms. Organ is incredibly impressive though, when played to a professional standard. I own several Hammonds (that I can play with an amateur level of proficiency, NGL). I’m professional guitarist/drummer as well, so I’ve been able to compare and contrast different instruments over the last 30 years or so. They’re all difficult for different reasons but with an organ, the difficulty is obvious and dramatic.
I had on my marriage on the amazing Organ of St Petri Hamburg Leon Boellman and his Suite Gothique... toccata fits to this one, especially on a 400 yold Organ with the music power somwhere ahed to 20kw... the cathedral was shaking... on my next celebration, perhaps baptism, i think i try this masterpiece :-)

This seems to be the hardest instrument to play. Both hands, both feet. That's... impressive.
Only other that come close are the timpani (hands for playing percussion and feet for tuning)
