    Actually, your offset should be -16*F, not +16*F since your oven set at 350*F averages 366*F. Thus, you'll need to set your oven at 334*F in order to average 350*F after it stabilizes. Of course those of us without digital temp inputs will have to WAG the offset setting.
    Also, you probably should reset the max temp alarm to something quite a bit lower than 350*F. If your oven cycles below 350*F, you will get another alarm during the 30 minute test cycles as the temp climbs back through 350*F.

    I just installed a new all gas NXR range and used your technique and gear to check my oven.
    My results:
    7:19 to get from cold to 350*F
    First 30 minute test: 347-428*F
    Second 30 minute test: 343-371*F (357*F average)
    Third 30 minute test with convection fan: 323-389*F (356*F average)
    I figure that's close enough to 350*F that I won't fudge the setting with analog knobs.

    Everything was understood accept the "offset". What is the action taken when "remembering your offset" to properly use your now understood oven temperature over the time of one hour, or how close to the posted temperature it actually is? Thank you for your attention. Robert

    How do i even know if my oven thermometer is accurate?

      Put ice in a glass, wait for it to start melting, measure the temp of the water while there is still ice in the glass. Your thermometer should read exactly 32°F or 0°C. You could also use boiling water, since that's also at a phase-change point with a known temp (212°F or 100°C).

    So, after pre-heating to 350, my oven went down to 309, and up to 367. It did get better the second 30 minutes, 364-320 for an average of 342, but how do I manage that for things like cookies that bake for less than 30 total? And this was without opening the oven to place a pan inside.

      Good question! Let the oven preheat until it gets into its steadier phase (some take longer than others), then put your cookies in the oven after it has started its temperature up-swing. The cookies will experience rising heat and should approach 350°F just as they need to get golden brown and finish cooking. The important thing is that your heat is only off by 8°F, which is pretty good. You could set your oven for 355°F, which will bring that bottom end of the swing up a little and help your cookies.
      Also, you can check the doneness of your cookies with a thermometer! They might take longer to cook than the prescribed time, but chocolate chip cookies are done between 175 and 185°F. Adjust your oven temp and cook to a finish temp to eliminate the guesswork.

    this had nothing to do with calibrating the oven???

      shot dog, Not sure what you were hoping to see, but this is actually a proven way to measure the current temperature of your oven and then calibrate the knob or electronic controls to better match your oven's performance.       @@thermapen Your video provided info on how to solve for the calibration temperatures involved, and it does a good job of that. However, shot dog was probably looking for the instructions on how to physically enter those numbers onto the oven keypad. 'Consult your oven manufacturer instructions' would be the "answer". The problem occurs when one has a very old oven for which those instructions can't be located.

      Uh If you listened he’s explaining no matter what the ovens temperature says it’s suppose to be at, the temperature will always fluctuate so he’s showing you how to find the average temperature between the lowest and highest points the oven fluctuates to. Which happens to be his 350F and it also shows that the longer you preheat the oven the less the oven temperature fluctuates. So if you did the same thing and the oven was set to 350 but the average temperature was around 400 then that means you have to calibrate it yourself or get someone else to do it for you. Or you can adjust it yourself and set the oven to 300 since your oven is hotter then it’s suppose to be.

    not what I expected, not calibration, just measuring actual temperature and fluctuation, oven controls used to have a scale that you could manually adjust the temp up or down.
