Back before there was an internet, I didn't even know that removing the membrane was a thing. I just cooked great tasting ribs that everyone enjoyed. I've done it both ways now and I find it's more trouble to remove the membrane than it's worth. There's mostly bone exposed on the membrane side so I don't feel that much seasoning or smoke penetrates the meat from that side anyway. I think for everyday home cooking you can't go wrong either way.

I’m with you. If I just want to really take my time on a long weekend I’ll remove it. I tried both methods on some friends and they ate them so fast nobody even noticed 😂
As a professionally trained (French) chef and an award winning cooker. I can tell you. We always cooked ribs with the membrane on. It wasn’t worth the hassle of removing it. Especially when you’re cooking 100-400 cases of ribs per show. Each case holds about 15 racks.
We found that when you’re cooking low and slow enough. The membrane doesn’t matter.
As far as sealing in juices. The only way is with a vacuum sealer.
We also threw them on a super hot grill membrane down at the end. Sauced. Flipped and sauced again. About that quick. You knew they were done when they really started to bubble up. And the membrane would just flake off.
None of the restaurants I've gone to remove the membrane either

The 2 ways to “remove” the membrane are 1 physically remove it. 2 cook it low and slow till it falls apart.
It's good either way for home eating! For comps, I prefer to remove to not risk a judge scoring it down. Great video!

As a CBJ in comps, I have judged ribs both ways, membrane on and membrane removed. It is easy to tell if the the cook removed the membrane or not, but it didn’t ever seem to affect the taste or tenderness score from the 6 judges at the table.
I do it both ways depending on my mood. The membrane kinda has a sausage casing texture. That's really the only way I can describe it.
Let's be honest here, that is really the only reason to leave the membrane on
Yeah I occasionally leave it on for that reason. Also I have a Pit Barrel Cooker and the membrane helps keep the ribs from falling off the hook.
Very well put, and that's a great reason to leave it on. Heck, if someone could make a dish from membranes or sausage casings, I'd be happy to pay for it ... yeah, I know I'm weird that way.

Great video, just encourages me to keep doing what I've been doing. Pulling all the easiest parts of the membrane off that I can in 30 seconds and not sweating it when I get a stubborn one :) keeping it relaxing while cooking!

If you do choose to remove the membrane, the easiest way, I find, is to use the scoop part of a spoon flipped over from how you usually use a spoon. starting at the edge of the membrane shove the spoon under the membrane to separate it from the meat. When you get sufficient membrane separated you can slide your fingers under the membrane and quickly remove the rest. Hope this makes sense.

I would always swear by removing the membrane, but now I don’t even bother and they always come out AMAZING!!!!!! I think it only matters in competition, just my opinion.

I am surprised you were so honest with the results.
I used to pull the membrane because it was 'the thing to do'. One time I forgot and thought I ruined the ribs. They were fine, you could tell the membrane was there but it didn't bother me in any way. I think most people wouldn't care if there wasn't already these established camps of Membrane vs No-Membrane, pick a side now and furiously defend your position.
I still pull the membrane at times, but most the time I am lazy and don't do it.
This is a cool find on You Tube. I am a rib fanatic and am experimenting with different recipes and cuts of ribs. This website is very, very helpful!

I've become camp "score membrane"
When cooked correctly the scored membrane provides a very slight texture like you experienced.
But you avoid the whole rib coming off thing you had happen as well.

I remove the membrane !! to be fair, it has nothing to do with flavor, texture, juice....nope. I just like the feeling when peeling/cutting off the membrane. cheers
SAME! I was always taught to remove it, I went through a period of time in which I didn't remove it, noticed no difference but missed that feeling of pulling the membrane off. Very satisfying.
I remember 55yrs ago, my dad would score the membrane to let more flavor penetrate. The membrane had a marvelous chew factor.

Sometimes it's good to do things just because dad said so. I love stories like this.
Yeah, I've done just as many with as I have without and I have NEVER had anyone even notice, much less comment on it either way. So I just leave it on and score it to make myself feel better lol.
The majority of the time I score the membrane in a diamond pattern. I've never had anyone tell me "They taste great but you didn't remove the membrane."
You bet! Love the chew, crisp, and juiciness of leaving membrane on. Why go to the extra work unless competing?

Very cool experiment, brother. I actually think if the ribs are no wrap I am starting to prefer the membrane scored Vs. off. It gives a nice thin beef jerky type part at the bottom and it’s mighty tasty. I’ve never left the membrane on when I know I’m wrapping. Sounds like another potential experiment lol. I just find it really really hard to remove it. Paper towel for grip...tugging and tearing from every corner, and it still doesn't want to come off. Screw it. Just leave it on. Like yours, I've gotten good enough that it doesn't matter.
what i've come to realize when BBQing is one thing. That one thing is, cook it how you want it to taste and eat. Most of us who watch this and all the others are just weekend cookers for the family. and if they like it, thats all that matters to me.
Truth! The rest is just opinion. We all have those. When people ask me where is the best bbq I’ve eaten I tell them my house… because I make it exactly like I prefer.

Yeah, man. So was I. lol. I guess technically they did have more chew to them but it was so minor. It was almost like a slightly al dente pasta. You notice but it doesn't ruin anything.
I appreciate these tests. Personally, I've tried with the membrane on a lazy day and didn't like the chew factor so will stick with pulling membrane off. I only cook a few racks at a time for the most part so it just becomes part of the process. Appreciate the test though, Thanks!
Try cross hatch scoring it next time. You won't even notice it is there and I like the little bit of crispy that it adds.
If u have a chew factor u are not cooking g them right....I always leave the membrane on and they come out fall off the bone good in my Weber smokey mountain.....zero chew factor.

The real question is, do you use a qtip or a toothpick to identify meat? Thanks again for great info!
What I discovered after driving myself nuts trying to get the membrane off, was that if I slash the membrane both along the bone and across the meat, there is no difference leaving it on. And yes, (this is not my first rodeo) - I know 'how' to get the membrane off, it just seems like a pain in the butt to remove it and now I find it isn't necessary.

that's what I do as well, you can still get some seasoning in there and it will take on some smoke without drying out nearly as fast than if you remove it

I find ribs less chewy too with it removed. Considering it only takes a minute to remove it, kinda a no brainer.
My wife doesn't like the slight texture of the membrane, so its an easy choice for me.

Awesome video,I've often wondered this many times over as I'm peeling the membrane off,every single time. That's one of the processes I hate about rib prep.anywho, good one! And i too will continue dismember the brane quite simply because I just don't like eating and chewing smoked gum.

I'm in the "slice up the membrane and leave it on" camp.
i always pull the membrane off, but the last rack i got, i had a difficult time pulling the membrane. i tried this slice method and can say its not bad. my main gripe with the membrane is when you cannot bite through it and it pulls off and takes half the rib with it. for me the clean its all about the clean bite and the slice method got the job done no questions asked. perfect end product.

I leave the membrane on and during the smoking process it dries up so when do you can actually take the membrane off very simply since it turns brittle...just my experience

considering that it only takes seconds to remove the membrane, go ahead and remove it, I'm trying to think of a reason to leave it on but I honestly can't think of a reason, juices will escape regardless
He was talking about juiciness etc... the only reason I ever heard of for removing the membrane is that it tends to make the final product tough. I was always taught to remove it, and it is easy enough just do it. 😎

Yup, with a little practice you can pretty much get the membrane off in one piece fairly easily.
When all is said and done, both sets of ribs look good.

I would like to see you do this on a stick burner, an Egg and a Weber. I think the method will produce a difference. I've gone full on pellet, RecTec, and I pull the skin. I find that as little as 10 degrees and 1 hour can make the difference in the rib. Awesome video dude!

At a restaurant I worked at decades ago we skewered them for a vertical rotisserie so we left the membrane on. I never noticed a degradation in flavor either way. Good experiment - thank you.
Cutting the membrane was the best experience I've had eating them. I've tried removing, leaving on, but cutting / (scoring?) the membrane is my preference
