      @@frgwyn3760 not exactly, not in there long enough to do that. Rather, it spreads throughout the dish when it all melts such that the concentration is lowered to a negligible extent. Additionally, since the alcohol is in food, it’s absorbed less, hence no drunkenness. Like 20-40% of the alcohol is still there tho!!

      @@johnnyray5613 it looked like he used a half a stick or a 3rd of chorizo(the single packs) though he probably buys or makes better. I like it meaty but yeah chorizo is pretty greasy also the alcohol I feel might help it cook better but I'm not a great cook and I don't use alcohol much unless it's like brauts or something simple and I don't drink liquor anymore for the most part I try to stay away so cooking with it is a bit of a no no for me I'd probably just drink the whole damn thing haha. I would like to make bananas foster soon though its my favorite dessert

    Every time I go out and get Mexican food I always order this. The only difference is they add fried poblano rings to it. I'm definitely going to be doing it this way though because it cannot be stated enough how delicious chorizo is.

    Okay so I made this last night but the Oaxaca cheese didn’t melt enough! It was still kinda solid but extremely hot (duh). I didn’t use a cast iron (though I really don’t know if that makes all the difference) and I didn’t tear the cheese into smaller chunks. Still super delicious but next time I’ll definitely follow this recipe to a T!

    Made this a few times since seeing and it's phenomenal. Super easy, you can even add more ingredients to the pan, and it can be made for one or many. Important thing to note is that you need high sides on your baking vessel so it doesn't overflow - I know from experience.

    In México is more known like "choriqueso", if you want to do it in a pan, just fry the chorizo without oil, it doesn't need it (with onions if you want), then add the cheese, move it until it's melted, and eat it with "tortillas de harina", it's fricking delicious 😋

    queso oaxaca is really tasty, even by it's own, like, the cheese itself, just taken out of the fridge, it is salty, but not in a extreme way. just really, really good, melting it for sandwiches or sincronizadas is just glorious

    Hey bro! I’m sure someone else has already written down this in some comment but I couldn’t find it.
    Queso Oaxaca is not a brand (maybe it is in the US, I’m not American, I’m Mexican), queso Oaxaca is a Mexican cheese that is from Oaxaca (a state) and there are a lot of companies that sell it. We also call it “quesillo”.

      Like he said, you’re basically just melting the cheese. The chorizo is already cooked, so just put it at whatever temp you want and eye ball it until the top layer of cheese starts to burn (but don’t burn it lol)

    We put the chorizo in the middle, it cooks it more evenly and it cooks the top layer of cheese in it but regardless how you do it, it's one of the beat flavor combinations ever
