Hi friends! I'm Jennifer, a forty-something wife and mother of 7 children ages 8 - 24. We are Catholic. We homeschool. We cook from scratch. We farm cranberries. We drink coffee. We advocate for Down syndrome awareness. We are loud. We are chaotic.
Here I'll share vlogs about all these things, what I'm doing that works and what I've tried but didn't work. I hope to encourage you in your journey through motherhood, homeschooling, learning to cook, and growing in your faith through it all.

I'm sorry you lost a friend Thanksgiving week. I hope that your mom is doing much better by now. What a smart idea to have your turkey prepped ahead and serve warm and juicy in it's own broth. Thank you for sharing your Thanksgiving with us. I'm seeing this on the 2nd anniversary of my mom's death and miss having big family meals, it was lovely getting to share in yours.

I made two different pies this year. One was a Black Forest pie that everyone raved over, and the other was a peanut butter fudge pie that we all agreed was way too sweet! I grew up with large Thanksgivings (the last one I went to at my family was over 60 people) and I was in charge the turkey and the dressing for all those people. I miss those large gatherings. I think one of the reasons that I love your channel (other than the friendship we have) is because seeing your large family fills a void. Come to think of it, that might be why I follow a lot of large families. Hope your mom is well! Looks like you all had a nice Thanksgiving.

Hi Jennifer! I made 2 turkey's, one weighed 20.47 lbs and after removing all the meat, the meat weighed 9.88 lbs. The second turkey weighed just a fraction over 15 lbs and the meat only weighed just under 5 lbs. It's hard to believe the small portion of meat we are left with after starting out with such large turkey's. Anyway, when you sounded surprised over the same comparison, I really wasn't because of what I experienced. We did not have guest for Thanksgiving, but I have many meals in the freezer, along with broth, so I'm very thankful about that. Happy Holidays to you and your beautiful family! P.S. Hope your Mom is home from the hospital and doing well so she can enjoy the rest of the Holiday's.

A good way to keep pie crust from cracking is not to fold before placing in dish. Roll pie crust onto rolling pin, then unroll across pie dish.
Easy peasy ! Also I always take a fork and prick bottom pie shell, helps in baking crust.

I think most of the turkeys that are widely available at the store have up to 11% of a salty broth sort of solution added to them. So when you bake it, all that excess tends to leach out. It lends itself to a tender, juicy bird, but you do tend to lose a good bit of heft

I love the little pilgrims, did you guys make them? They are wonderful! Love the idea of cooking the Turkey ahead of time! We are not American but we have our own kind of thanksgiving as a family, any excuse for food and watching a parade is good for me lol. I cooked a big Turkey leg in the oven the day before and then stripped it and put it in the instant pot with veggie scraps to make my stock for the next day as we only had a Turkey crown for the actual meal. Was some of the best stock I’ve ever had!

Oh those home ground Cranberries ! Ocean Spray sure doesn’t compare, lol. Save that turkey grease to make the roux for your gravy, you need a fat so why not use the turkeys. Makes a big difference. So sorry for your family’s lost, never a good time but holidays are especially hard. Glad your mom is feeling better.

I always precook my turkey on Wednesday too 🙂 I inject mine with Cajun butter and cook it to just exactly 165. Then I rest it for 30 minutes and hack that sucker up 🤣 I put it back into the roaster with its own drippings and cover with chicken stock and pop it in the crockpot Thursday morning. SO moist and flavorful!!! Even the leftovers we ate on Sunday and heated in the microwave were amazing 😍

I start my turkey at 2am Thursday morning and set it at 250° then I go back to bed. When I get up I check it to see if it is dry or not and then around a hour before we plan to eat I turn it up to around 350° to brown the skin. I have never had a dry or bad turkey doing it this way. I prep all the oven stuff ahead and happy Thanksgiving.
