When burning pellets, you fill just below the top holes and then use a fire starter on top of the pellets. You don't put a firestarter on the bottom and try adding pellets on top of the fire starter.

How do you clean the ashes of the XL model if the bottom is not removable??

No, they do make accessories to cook with on the larger stoves, but not the smaller ones for now.
