Hello from England. Thank you so much for this video. I bought one of these Petromax K4 pans and didn't know how to use it. Today, after watching your video I used my bread maker to prepare dough using 600g bread flour. I then rolled and tucked it the way you show and then baked it. I used 200 Celsius in a fan oven for 45 minutes with the lid on the whole time and it was perfect. I'm going to try seeds on top and an egg wash next time. Thanks for taking up your time to show everyone this. Much appreciated. (Of course here in England I'm going to pretend it's all my skill!)

Your Pullman pan will work just as great as mine. Take the cover off after about 20 mins of baking & bake for another 10 to 15 mins. It should looks just like mine did.. I am so sorry you to suffer with Fibro.. Big hugs

I looked and they don't ship to USA. Wonder if I got a cast iron bread pan then used a large enough flat bottom cast iron skillet to set in top of loaf pan as a lid. If that would not work as well.
Watching all the videos I can about Pullman loaves and sourdough. I noticed you didn't check the temp of the loaves to help decide if they were fully baked. I'm on the fence about "needing" that extra step. Have you ever had an under baked loaf?

White Bread Recipe in Cast Iron Pullman Pan. 8 c All Purpose Flour 3 c water 1/4 c sugar 3 TB oil 1 TB Salt 3 TB Yeast Peel from 1 lemon Grate Nutmeg in flour mix. Not a lot just enough to say it is in there. 4 TB Potato flakes I got to put the dough in I grease pans lightly with Butter flav Crisco & coat bottom with corn meal or corn grits. I use corn grits cause I have a ton of them. tap out upside down then I grease the top. Put lid on while the bread is doing its 1st rise. Weigh out dough 2 lbs. 3 oz. for 1 Cast Iron Pullman pan. Make 2 loaf pans. Pre heat oven to 425* Bake in Pre heated oven when dough reaches about 1 ½ from top of lid. Bake for 20 mins. Lid on. Take lid off turn oven down to 375* for 15 mins. Take out of oven let cool with lid off till completely cool. They poor right out.
