I did not see you cut the bread as you mentioned you would do at end. I have the USA Pullman pan with lid. I always get a beautiful square oblong 16:24 loaf. So nice for grilled cheese, french toast, whatever you want. A nice size slice for sandwiches.

I'm glad you tried it! I love mine. It's great for cutting even slices. Texas toast would be good to cut with the shape. There are still times when I want a crusty bread with dinner. It's good to have choices!

Yes I do use that proof setting sometimes. It works great for almost any recipe small enough to fit. It’s fine for baking something shallow like dinner rolls, hamburger buns, etc. but baking a two pound loaf can be challenging. It’s so tall it almost touches the top so the top browns too fast. You have to tent with foil within about 10 minutes. I have never been in an apartment that didn’t have a range/cooktop and oven.
I have this same pan but I’m finding that my dough is taking over an hour to rise and I saw the dough trying to come out of the small holes in the bottom. Should I put parchment paper in the bottom? I am not understanding why it’s taking forever to rise to the top of the Pullman top. Any ideas and tips?
@@SD-zk2te i guess I’d have to know your recipe. I have never had dough leak out the bottom. I wonder if your dough is too wet. Are you letting it rise in a warm place? How nice of you, Ellen, to buy a Pullman pan. I see there are smaller Pullman pans, and some on RUclips baked two small ones in the Air Fryer! I didn't have a Pullman pan but made half of my French Bread recipe in a 5x7 loaf pan with foil securely tucked under the pan as it baked in the Air Fryer. Tastes good as the other half that I baked in the standard oven but missing the golden brown crust when baked in the Air Fryer. All this just for interest. I probably don't need a Pullman pan either, but this was fun to see the results in your kitchen.
Hello. I just bought my Pullman pan and put a batter for gluten-free bread in it, which said it would be a pancake consistency, which it was, but unfortunately it leaks through the holes in the bottom. Would you just suggest putting the pan on a bake sheet to stop the flowing. Where am I doing? Something wrong? Thank you so much.

No. I just heat the oven at lowest temperature for ONE MINUTE and turn oven off. It stays just slightly warm which is ideal for rising. The light is unnecessary.
Deflation happens when you either have too much liquid, the amount of yeast is not quite right, or you don’t cool your bread outside the pan on a rack soon after baking. Please try my Soft, Fluffy White bread recipe in your Pullman. It’s never deflated on me. Another reason could be a cold kitchen. Is your kitchen temp under 72 degrees? My recipes are on my website. I just baked a loaf of Mostly Whole wheat bread. I used white whole wheat flour. It tastes great and the crust had a small darker area. I used a Pullman pan.

@@Florismom this pan is really big so it might. I haven’t tried it. What might be a safer bet would be to reduce the recipe by reducing each amount. Multiply each number of grams by .85. I might just try it! The other thing you could do is use the Pullman as a loaf pan and make the full recipe. If it doesn’t rise over the top, add the lid for baking. If it is too big to add the lid, you’ll know for next time to reduce it.

You do not know what you are doing with a pan de mie. The finished loaf should be touching the top. It should be square. Folks, she is extremely sweet and that bread probably has an awesome taste, but do some actual research.
@@Chakwaina when did I say I was making pan de mie? I didn’t. I was using a Pullman pan to show how it works. That’s it. My recipes are all tried, true, and delicious. Sometimes they aren’t as perfectly beautiful and they’d because they are homemade.

Is Texas toast basically garlic bread? I’ve seen it in the frozen section of the grocery store and it looks like garlic bread.
Yep thick cut garlic bread. Homemade would be better than the stuff in the store

I would actually suggest you bake it in the bread machine. Gf dough is batter.

That’s what I think! It’s a huge pan so the slices are more shallow than what I’m used to.

I have a small one. I used it once and did not like the bread shape. I prefer a dome on the bread I make

The other thing you could do is use the Pullman as a loaf pan and make the full recipe. If it doesn’t rise over the top, add the lid for baking. If it is too big to add the lid, you’ll know for next time to reduce it.
