Kneading the dough to build the gluten is not what causes a “tough” loaf of bread. Not having enough water in the dough and not letting it rest and rise enough is the problem. But you need to build up the gluten because that’s what allows the dough to hold its shape during baking.
3 years later....yes, and also too much flour. Learned that from watching British Baking Show! A little oil in the bowl etc helps with sticking without drying it out.

i'am going to try my weber with bread pans and try not to get the grill to hot. I've been making a buttermilk pizza dough OMG ITS SO GOOD. This time going to use my pizza dough for bread ~ Now i have been cooking my Pizzas at 275 deg for 20 min on the weber. They been turning out EXCELLENT Now the 16" pizza pans need to turn the grate over where the handles are down and a peace of rubar to make the pan fit flat , And a pizza peel, to put the pizza off and on the grill> cover and check around 10 to 15 min
I make homemade often because I quit buying from the store years ago. Mostly baking with dutch oven and skillets unless I wanted a loaf shape, only had silicone, glass, and non-stick. Loaf shape only required when gifting. I tend to make rolls, large sandwich/burger buns more often. Finally got a Lodge loaf pan not long ago. Like your loaf, my loaves just slide out easily, have a beautiful color, and taste delicious. I will try making loaves of bread in my grill this summer. Fresh bread doesn't last long - after smelling them bake it's all I can do to not eat it all at once while it's warm.
Dustin DeWind I cant see joe portaging with any cast iron on his trips. I do enjoy his videos though. He usually leaves bring the cast iron up to the guy who built that cabin with his dog.

The Lodge bread pan is awesome! I have been using one since 2012 and talked many into buying one. It just bakes bread better than a regular bread pans. The only negative I have is that it makes a rather small loaf. Highly recommended!
David K I bought three of them a couple days ago. I have a recipe that makes two 10” by 5” loaves, so I’m gunna split the dough into three loaves instead.

I use a 32" Flat Screen for my Monitor. That looked more like a Lasagna Pan than a Bread loaf pan. And, I would have Joked "Tears of JOY" when you said about Allergy Season.
Just saw your cast iron loaf pan demo. The bread turned out looking perfect. I just bought my very first cast iron loaf pan ( it's on its way ) the promo video for this pan had suggested pre-heating the pan before dropping in the proofed dough. I wonder, how am I suppose to pre-heat the same pan that will also be used for the second proofing. Does it really have to pre-heated in the first place. Any input or suggestion from you would be greatly appreciated. Thanks in advance.

I got one of these a few days ago. was a killer way to make some bread from my home grown yeast. but... I don't think it's too amazing. I left my loaf to cool down for a bit, but when I took it out a couple of hours later...it looked like there was rust on it. Otherwise an awesome tool, but I think you have to be a little quick. kinda spoiled the bread on the outsides... and I have to reseason the pan a couple of times now. Question; other than taste and look, how bad is rust for you? Anyone got any other ideas on why that rust is forming so quick? I seasoned the pan before I started with some olive oil.
@@B_L_Smith yup. Pretty much exactly what happened. I will try again next year, as I have to re-season it, but right now I’m getting great results with my sourdough starter and my Dutch Oven.

It usually takes about 15 to 20 minutes depending on how hot you're cooking. You can test the interior temperature to check for doneness after the bread looks nice and brown - it should be about 200 degrees F inside the center of the loaf.
Watched. Rewatched last half, then last 3/4. All I heard was short time switch vents. 2 to 3 minutes with butter. Thinking description should have recipe with time. Nice looking bread. Talented.
@@scottengh1175 It's going to depend on your grill, your temp, your weather, but generally,,about 15 minutes. This is not cooking in the oven, so just keep an eye on it. Thanks for watching.
@@BackwoodsGourmetChannel thanks. I do lots of Dutch oven baking with Kingsford original. Outdoor with wood fire is always hotter than indoor over. That is fast! Figured you had less than half hour to maintain 400°F with one charge of briquettes. Awesome baking.

Bill Astell Any salt but iodized salt, I don’t use. Kosher salt you can use more because of larger granules.

Understand modern lard has chemicals and preservatives added to it, specifically Propyl Gallate, research the side effect.
Wonder if he actually washed that loaf pan! Bet you he just ripped off the tag and stuck that lard on it.
He said in the video he washed it with a little soap & rinsed it. What I didn't catch was the time he let it rise in pan, or how long it cooked.
