  • Sweet, sour and mildly spicy... chicken pathia is a curry house favourite and also one of my daughter Jennifer's favourite curries from my cookbook 'The Curry Guy'. Here she shows how to make it. This recipe makes enough for one generous curry house portion or enough for two.

    Omg made a large batch of base sauce last week, and had a go at this Pathia after watching your daughter, it was amazing, the mix of flavours coming through was unlike any takeaway we’ve had. Following the recipe to the letter proves that anyone can do it. My wife and I have said goodbye the local curry shop. And 3 whole books of recipes to go at,thanks Dan.

    You must have read my mind. I made this for dinner last night.
    I never thought to use tamarind. I always go for a bit of amchoor and a pinch of tandori masala.
    Good effort. I will give the tamarind a try next time.

    So you don’t need to measure base gravy at all and instead you just add it to get the consistency you like?

      That's right. When I cook at home I never use measures. I had to include measures in my books but they are really just guides. :-)

    The h in Pathia isn't pronounced, it's means aspiration.

      Thank you Rhys. I'll see if I can talk her into doing another. This was Jen's first time filming while cooking and I think she was a bit nervous. :-) She usually just whips it up but it's difficult cooking and talking. Hope I can get her to do another. Cheers.
