    Tip: If your water yam is the "new" one, make the ration of cocoyam and water yam equal. This will make the mixture less runny

    It looks so delicious but is it compulsory to wrap the grated wateryam and cocoyam

      That is what makes it Ekpang- the grated mix stays firm that way throughout the cooking process but if you don’t want it like that it will then be called something different- Ótór or ikokore in Yoruba but without the cocoyam tho’

      You're most welcome Ujah.
      If you noticed, I added meat stock. My meat stock was well seasoned, so there was no need to add more seasoning.
      Notwithstanding, If you taste yours and you have any need to add, then go ahead.

    Do I need to use the curry and scent leaf?

      It adds flavour to the meal. So, I usually don't omit either of them. You can omit if you don't like them or don't have them.
      ...But I'm not giving up🤣. Add either of them tho'

    Looks delicious. But Efik & Ibio are in the Southern Nigeria, not the East.
