I can vouch for both the black bean brownies and the pudding. My recipe for brownies is almost identical, and we've been making them for years. I've fooled many a non-vegan with them! We also make the tofu "pudding" and serve it with coconut whipped cream. If it's a special occasion, I'll put it in a graham cracker crust and turn it into a "French Silk Pie". Both desserts are awesome!

I've been wanting to do a bean brownie recipe but I can't eat beans. No matter what I do to the beans, they give me terrible gas. But, I just recently found out about tepary beans through Ramona Farms. I just ordered some and will give them a try, they are not suppose to produce gas like regular beans/legumes. If they work, then I will try this recipe...looks good!

Those brownies... Wondering how dates might be incorporated. Dates would certainly kick up to gooowy factor and natural sweetness. This recipe also has me wondering why I spend $37 on a jug of Michigan maple syrup! UGH! And... You had me at the second round of chips on top :). I was like.... YAAAAAAASSSSS Andrew! Your story reminded me of the Rupert Holmes Escape song.... Do you like beeeeeeeaaaaaaan brownies bum bum and gettin' caught in the rain? BAHAHAHAHAHA! It also reminded me of Michigans Mackinac Island and watching people make fudge through the shop window at the end of the tourist season. Don't worry friend, I would share my umbrella. Walnuts would add more protein and a healthy dose of Omega 3's. The pie.... You had me at a bag of chips, cashews and chill... PEEEAAAAAAACCCCCE!

I can get sugar-free vegan chocolate chips, which is awesome, but if I can use cocoa powder to get the chocolatiness, that is preferred. TYVM for the video!

    • @thenarddogcooks

Hey! You could but you'd also need to add sugar or another sweetener to counterbalance the bitterness of the cocoa powder. Unfortunately, I haven't tested this recipe to have a recommendation. I'd start with about 1/4 cup of sweetener with at least 1/4 cup of cocoa powder

    • @thenarddogcooks

Thank you so very much, Robin! 🤗
Looks like I found the comment so Ill add what i shared to the other question i saw your comment at as that will answer the "why" question you have and share a bit more on the US piece. See below:
Im not one who tries to change anyones mind. I do my best to provide facts/information/references/etc and from there wish for you to make the best decisions for you and yours. With that said Ill share my awareness on tofu and why I have it in my diet.
High in protein, low in carbs, low in fat. Has calcium, manganese, copper, vitamin A, iron and several other vitamin/minerals while containing all the essential amino acids the body needs. Like MOST PLANTS it has anti-nutrients also. Im not entirely sure if this is what you mean, when you say "steals your minerals". Basically the anti-nutrients reduce the absorption of vitamins and minerals but it not a huge concern for people who eat a varied balanced diet. Plus if you cook, soak, ferment or sprout your plants (not just tofu), you can reduce the anti-nutrients.
In conclusion you can see a lot of plants "steal your nutrients" or minerals. Just keep a balanced diet (eat the rainbow).
As for the Tofu in the US, the only reason i have ever heard, read or witness as possibly valid is that the Tofu in the US is GMO. To that the answer is simply buying Non-GMO or Organic tofu. This way you save the hassle of your body dealing with what they may put in the GMO versions. Thank you, Robin! Hope this helps out on why I choose it.

Thank you so much Andrew!! I know better than to ask a question without really backing it up!! I appreciate your answer and I do purchase the non GMO organic tofu. I’m also a 4 yr cancer survivor soooo I have heard it’s not a good product for cancer. I’m not looking for a response just chatting. I do eat tofu maybe once per month. I’m pretty healthy, no pork since I was 11, no red meat since 18, was a vegan 20 years ago. Been mostly vegan for the last 3 years!! Damn cheese and 1/2 & 1/2 with my coffee!! Okay I’ll be quiet now!! Your recipes certainly help me to do my vegan thing a whole lot easier!! Thank you again ! YOU ARE INSPIRING and not to mention easy on the eyes!! No worries I’m a little old gma here😂😂😂I’m a photographer too!! and studying to be an end of life Doula!! My goal is to bring birth and death together!! Damn I’m done
      You’re #1 fan😂😂
      Peacefully
      Robin

I’m gonna give the brownies a try tomorrow! What could I use in place of the tofu in the chocolate pie? I love the idea of making it as mousse. I make a killer homemade pie crust though. Thanks!

I did a quick search, looks like applesauce can be used as a replacement for tofu? I’m gonna try it and will report back!

Try sweet potato instead. I don't think applesauce would work, especially not for creaminess or holding up as a mousse, but sweet potato would be a good substitute, minus the peel.

Hey! for the tofu replacement, i would use something more firm that will setup. I agree trying out the sweet potato although it wont come out as airy and i havent tried it myself. I would also say avocados. I wouldnt do apple sauce though. Its going to come out more heavy. if you made Aquafaba before i have a recipe that would come really close to this tofu one. Its here makeitdairyfree.com/vegan-chocolate-mousse/#recipe you could use this to replace the filling entirely and i know that works.

Very beautiful set-up. A great addition with your personal stories within the recipies. Looking forward to try them.
    You said:
"You cant make blood out of stone". That made me think about this:
Christ is the living Stone. People did not accept him. But God chose him. God places the highest value on him. 1. Peter 2:4
And that stones blood save us from our own sins.
