Just brown on the flesh side first, flip and brown on the skin side for a few minutes and remove to a plate. After a few minutes as the sauce thickens the skin can be easily peeled from the salmon. Place salmon back into the sauce to finish. Simple with great taste.

My son frfies up the skin until it's crispy. He loves it. I think I would remove as many scales as possible if I were gonna do that. Your filetting knife needs to be a flexible narrow blade. The tail portion is the best part of the fish - in some fishes it is the most boneless or the only boneless part.

I never cut off this flat edge 1:52 when I make salmon (broiled, pan seared) because it gets nice and crispy. That's the best part!
Yeah it looks better this way and also it breaks up more easily and probably wotjput the skin on, flat edges would simply fall apart on the sauce.
