Perfect Pan Seared Salmon with Lemon butter Cream Sauce and Crispy Skin

This pan fried seared salmon is poached in its own sauce rendering it flaky and moist. There’s the option of a crispy skin, by baking it separately if you wish to impress. It’s the only way to get a crispy skin with a cream sauce. Without the optional crispy skin, this dish is quick and easy to make and guaranteed to be of restaurant quality. Of course you need good salmon first, so buy it fresh from your local fish monger. These types of fish are generally cooked medium to medium rare so please don’t overcook it unless you absolutely must. Either way you will fall in love after your first morsel of this delectable one pan wonder dish.

I just made this and it was amazing ... highly recommend recipe... instead if the wine i used fish sauce and mixed it with water.. I also added 1/2 tsp of garlic ...

Agreed. Salmon should be removed before reducing wine. Or wine could be reduced separately and then added to the fish. Raymond Blanc does it that way.
Been wanting to make this for a few months and finally went and made it and the sauce is so good 👍. I’d recommend anyone making this to add some garlic paste or minced garlic to the sauce.

If you're allowed to, then you can substitute with a small amount of vinegar, or just leave the wine out... the lemon juice should provide enough acidity...

Last night, it took me 45 mins from start to finish to prepare two fillets of rainbow trout, side vegetables and baby potatoes and a Beurre Blanc sauce. In that time I also baked 3 small slow fermented ciabatta rolls. Needless to say, I was quite pleased with my timings, however, if I had used this recipe, I could have halved that time!

The best substitution is apple juice or apple cider vinegar
combination of vinegar (1/3) and grape juice (2/3)
