For snook, wait till winter and follow the stuff in my older snook vid. Reliably targeting king george whiting off the rocks and beach is always difficult but I would recommend a calmer day, a 9-12ft rod and going to 'o' sullivan or outer harbour breakwaters and using squid strips or cockles as bait. Yellowfin are off season now and this year hasn't yielded them well either. Its best to wait till next summer.
Winter is difficult. You have to go on a day where the water is clear, starting from Brighton jetty, every jetty South from this is good. The rocks are tricky/less comfortable in the cold.
