    Love the hair colour. It makes me think tropical sunset.
    Every christmas as a kid there was a plain red jello and one with canned fruit cocktail or a green one with grated carrots in it. As we became adults the jellos disappeared except the red one was always made. Mom is gone now but every Christmas I make candies from her 1955 cookbook that she used to make. It's our taste of Christmas and have passed it onto another generation. And yes there is still a red jello on the table. Thanks for the retro recipes-love them

    What was a beautiful celebration dinner without a jello salad! I personally only ate raspberry jello… had to be red! What a lovely way to remember your Mom with her famous Lime Ring… thanks for the memories… Side note …. That hair colour Jen, you ROCK it!

    Reminds me of trifle. The idea of prepping a dessert the night before, doing the layers and having it slop onto your plate is something that we don't regard as gross with this kind of dessert. We all loved having something cold on a hot day after a hot meal. There is always the designated person to make trifle though cause they are the expert

    My grandma always made lime Jell-O, cottage cheese and pineapple salad. I tried to make it and it went okay. Hardly anyone in my family actually likes it, but it holds a lot of nostalgia for me. I'll probably make one for the holidays

    Ok, but first, wow! Your hair! It's like a Highlighter Dream! It's so bright it's glowing like Neon! I don't envy you the upkeep. Anyways! What a fun video. I don't know any vintage/retro recipes, so I can't recommend any, but I'm looking forward to more in this "series".

    Fun video. Did you know that Tupperware came out with "vintage" items and they released a jello mold in sky blue? My family has a tradition of a orange jello with peaches and it's a 2 tier. Top tier is straight jello with peaches and bottom tier is jello mixed with whip cream. So good!

    HOORAY! Vegetarian vintage styled food recipes. I am forever veganizing vintage recipes. And did you know there is a vegan vintage Betty Crocker cook book. I had it but had to give it away when I had to move house, thankfully the public library has a copy :)

    My Absolute Favorite dessert salad is my grandma's lime jello salad from the 1950s. It's a package of lime jello(just the powder) mix it with cottage cheese, drained crushed pineapple and cool whip. Mix, let set and eat. Delicious! I make it all the time.🤤🤤🤤

      My family makes this, but orange jello and canned mandarin oranges because my dad and I are allergic to pineapple. It's my favorite.

      @@megancanada8496 that would be good too! Once in awhile when my grandma is feeling fiesty she'll use raspberry jello and raspberries instead of the pineapple and lime jello. I like that too but not gonna lie, the lime one is my favorite.😉

    What a sweet memory making something your Mom made. I suggest using a just a little bit of cornstarch in the gelatin to firm it up a bit.

    I remember jello salads.
    Watching your version, I have a couple of notes. First, check the package. You were comparing sugar free to regular sugar jello. There is probably a change when molding the gel (like for Jell-O shots). Your idea to decrease the amount of liquid is a good one. Also look into no flavor agar to give more structure.
    Second issue. Don’t add whip cream with a whisk, you are losing all the air pockets that make it fluffy. Always fold in your whipped cream in thirds. The first will deflate but bring the creaminess in. Then you add loft with the second and third portions.
    Great first (actually second try). These things are hard to make and take practice. Glad you were able to find a way to bring back flavor memories.

    Because I’m a giant nerd (and a vegetarian who loves vintage food) I looked up the ingredients of Simply Delish. Turns out it contains carrageenan which I think is a less robust jelling agent than agar. I wonder if agar, or a mix of the two might be more effective?
    I have to tell you how much I love your spirit, as well as your cookware.

    OMG it's lime cheese jello salad! My grandma made me a recipe box when I was little with a recipe for "Aunt Bride's Lime Cheese Salad," which other than the use of fruit cocktail rather than pineapple, is a very similar concoction.
    Fun fact: this is the only recipe my grandma put in the "salad" tab of the recipe box. In embracing this loose definition of salad, one of my additions to the salad section was a recipe for MSG noodles.

    This was fun! My Mom used to make alll kinds of jello concoctions! She would make a lime one with vegetables that I hated! I'd pick rhe vegetables out and end up with lime mush! aaah, sweet memories!

    What a fun idea! As someone who grew up in Northern California, I never had any dishes like this around. BUT, I am very very happy to see veggie versions of super kitsch vintage foods! I never have the patience to do lots of recipe testing even though there are so many things that I could just never try because they have animals in them.

    My Gma always made the lime jello- cottage cheese salad. That was dessert for me. I could do without the pies and such and eat the entire bowl. (Not like I was ever allowed to do such a thing. LOL)

    See that mixing bowl of yours??? We've got a whole set! My mum had them amd now my sisters got them! Red, with an orange one amd i think a green one, WITH LIDS!!! Lovely mixing bowls. At christmas we do a brandy cream which calls for an egg white. Without the egg white its this thick cream you could cut with a knife. With the egg white its a lovely smoothe easy to handle bowl of deliciousness.

    My family is from Wisconsin so I definitely remember having this as a kid, LOL. I remember it being sweet, tangy and creamy and I really liked it. May have to ask my Mom to make it again next time I visit! Have you worked with Agar Agar Powder at all? It's the vegetarian version of Gelatin and is usually found in Asian grocery stores. Might be something to look into....sounds like you're just a couple tweaks away from nailing this recipe though. Maybe add a little for additional stability? Thanks for the nostalgia flashback! Love it.

      I'm so glad you enjoyed it! I haven't tested it but I think you could use a vegan whipped cream and cream cheese for this (and leave out the egg). I'll definitely keep it in mind for the future. ❤️

    I noticed the Simply lime was sugar-free. I think that might have affected the formula and definitely the taste. I'm wondering if a little pectin might help hold it together better and you could dial back on the jello substitute? Not sure if pectin is vegan-friendly though. Green jello salad is one of my favorite memories from childhood. I make it just for me now and eat it all the time. I have changed it to make it more diet conscious. I use sugar-free lime jello (a small pack) add 1 cup of boiling water add 1 cup of crushed pineapple, 1 cup of cottage cheese, and about 1/2 cup of pecan pieces. I have a recipe for Coca-Cola salad that uses black cherry jello which was a favorite holiday dish too. I would be happy to share it and I can add it to the Facebook page. Your hair is screaming SUMMER and I love it!

    Lovely summer colour hair. Veggie recipes too! The "modern age" she seemed to be full of time savers. I make up the jelly put a cocktail cherry on a stick and put them in individual cocktail glasses. It seems to have a 50s look. Fun!

    Cool video. My grandmother made all manner of jello based salads and aspics. Actual gelatin WOULD be slicable and hold together. I don’t think there’s any edible vegetarian product that would hold something together like jello. But it looks cute and cutting back on the number of packets used would lessen the lime impact a bit.

    I’m a texture girl though. I can’t do jello.
    Still fun to watch.
    As someone who’s gluten free with a daughter who’s dairy free, it’s hard to figure out recipes.

    My advice: try using Agar Agar from the Asian Supermarkt and not so much of the lime powder. That should make it less intense on the lime and at the same time give it more of the jelly effect while itself is tasteless

    It's great that you didn't just present us with the finished "perfect" result but went through trial and error and explained the alterations and the reasoning behind it. As a European though I am aghast at the popularity this dish apparently has in the U.S. Just the colour is something you have to get accustomed to. Though I guess there are a few dishes around here, too, where you as a U.S. American would do a double take😅

    Check to see if they make it in a non-flavored version. I know they do with jello. Then you can keep the amount of structure without over-doing the lime flavor. Anyway, looks good!

    Wilton's meringue powder might be your answer. It's shelf stable, and makes a decent meringue.

    Some of the flavor difference also comes from the fact that Simply Delish uses artificial sweeteners. And it's even prone to water leakage if you make it to package directions. Using that much powder, this could be a bad idea for someone who can't use those sweeteners. You could try making a recipe for lime Jello with fruit juices and agar agar to avoid that.

    The new hair looks amazing and perfect for summer! Fun new series even if I cannot go vegetarian (severe food allergies mean I can’t meet my protein needs with a vegetarian diet)
    Is part of the structural complications from the pineapple? I know canned is technically safe, but I’ve seen gelatin fail with canned pineapple before. Never had it since pineapple remains one of my worst allergies.

      @@JenniferElise I usually do as Gramma P did - raspberry gelatin with mandarin orange segments. Or strawberry gelatin with peaches. Granted, I use boxed gelatin and Gramma P started with strained cooked down fruit and added plain gelatin.

    Hi Jen! Your hair is drop-dead gorgeous! I love all of your vintage kitchen items. My mom did a similar jello-o dish but hers was all pineapple/lemon. Quick question: is it cool whip or whipped cream?

    We do a lot of jello salads in my family, especially. My favorite is cool whip, cottage cheese, fruit, and dry jello. It's typically done with lime jello and pineapple, but my dad and I are allergic to pineapple. We do canned mandarin oranges and orange jello. We also do champagne salad often.
    I also like when you change the typical flavors, some people don't recognize it. My mom does four stack pudding a lot. I'm not a fan of chocolate, so we do lemon or pistachio (my favorite). She has had people at church dinners like the dessert and ask for the recipe. They have made and brought the same dessert previously, just a different flavor.

      @@JenniferElise We like champagne salad because it's frozen, which is perfect for summer. You can eat it before it's frozn, but it's missing that something.

    This is definitely a sweet thing to do in celebration of your mom! But damn, I think I'm with your sister, this sounds pretty not tasty. A lot of these midcentury midwestern dishes just don't make sense to my modern palate (and definitely were not what my family ate back in the day). Fun to watch though and I look forward to seeing you do more! Although, I do think they should probably be vegan friendly.

    What you call jello is what is known as jelly here in Australia. Even until the late 80's my mum was still making jelly salad. It was never good. Mum's was very different to yours. She'd grate carrot or beetroot and set it in the same coloured jelly.

As a vegetarian who loves retro you should check out Sage Lilleyman's Dining through the decades series here on youtube if you haven't yet. In all of Sage's videos in the series she makes vegetarian versions of vintage recipes.

    Theres a vegan jelly called carageenan, which is clear and seems to hold its shape. I watched a vid by a Japanese woman, bamboo princess i think, and she showed us. You could use that, and real lime juice maybe?

    You might have better luck with Agar Agar. It sets way more firmly. Though I've never used the brand you're using of vegetarian jello so I'm biased lol

    I love your hair color! It really brightens your pretty face! My Aunt Gerri used to make this and we called it green stuff! I think it had nuts and coconut in it as well.
