Something I always do when making a Jelly is that I pour a tester into a small container first to see how it sets. If it doesn’t, then you melt it back in with the mixture and add more.

This specific recipe is from ‘73, not too much has changed in mass produced gelatin since then. Next time use Knox envelopes, they were pretty much the standard for savory gelatin recipes of that era. If in doubt add an extra half packet. Also let the jelly set to more of an egg white consistency before adding the vegetables, that can have effect on how it sets and the presentation. A very noble attempt at a potluck staple!
Ooh thanks for sharing that extra information! My second attempt at jello food did work out better, but I haven't tried this specific recipe again...though now that it's summer it might be on the cards!
Try to imagine an era when people didn't go out to buy a coffee, or depended on burgers and burritos for nourishment. People actually used their kitchens on a daily basis (and actually new how to make a gelatin mold) and they of course tried new things. People back then did not make burritos or burgers at home, I can remember how at mama's table we first dealt with spaghetti. It was not easy to eat. And people did not want fried chicken or meat loaf every night. And we knew even then that veggies are good for you, and perfection salad will combine cabbage and green pepper and it will be served in a neat slice of sweet lemony gelatin on your plate. It needs a savory dressing and to be served on lettuce with pineapple pieces and Kalamata olives. If you can get over your fast food perversion about food and try not to obsess over where the missing chips and fries are you can do credit to this marvelous side. I had it on the side of a stuffed baked yellow onion today, stuffed with spinach, garlic and Feta. Um so good. But then I haven't had a burger and fries since probably before you were born. Saw somebody having a heart attack at McDonald's and couldn't get anyone at the counter to understand my English well enough to call an ambulance. Poor man died foaming at the mouth and I never went back.

No offense, Salinda... but you had me cracking up(when it was a big puddle on the plate)! Hey..look at it this way....sometimes we have to have some failures before perfection. Keep trying new things and DON'T GIVE UP! If you can bake...you can cook. When I look for recipes....if the things in it don't sound great together or if the recipe has things I know I don't like, then I just leave out the stuff I don't like.

Yes a lot of traditional Eastern European dishes use aspic in them! Maybe I'm drawn to them because of my Polish roots then?? Haha but yes it was fun either way!

I too have a weird obsession over these strange gelatin foods of the fifties. Pretty sure my attempts would yield similar results.

Wow thank you so much! I film on my Samsung Galaxy S10+ and use a Boya lavalier mic for the actual recording, and a phone tripod to set up my shots!
