    For lamb lovers ….lamb shanks make the best Osso Buco ever……..same recipe just with lamb……it’s huge favourite between my family and friends……even people that don’t like lamb have loved it…..

    My all-time favorite is Osso Bucco ... the classic version with Veal shanks and Risotto Milanese as the side dish. I've been making this dish for the last 30 years without variation.
    One day, I might be tempted to try it with Beef shanks. Maybe. I liked that you added a garlic bulb before putting it in the oven. And I always add a slice of lemon rind at that time, which adds a subtle but noticeable flavor.
    This recipe takes a little time and preparation. It freezes well and tastes excellent when re-heated.

      @@RealCookingInMyKitchen IF you add lemon rind, make sure you boil the rind first in water, discard water and then taste rind.
      If it still tastes bitter, boil it again/and taste...
      I made osso bucco tonight, and I didn't think it was important to preboil the rind (like Julia Childs said). It was.
      The osso bucco was still really good, but the hint of bitterness detracted from the dish. :)

      You can substitute them with oxtail. It requires low and slow cooking much like shanks do.

    This does look tasty. I used to cook with wine often when I lived in Spain. I have never seen these beef shanks available but I will be looking out for them. Also I used to buy Oxtail when I lived in Spain but don't see them available either. I am excited to see what you are going to do with these beef shank pieces.

    Looks good! I would wrap the thyme and Rosemary in cheesecloth and tie it with a string. It makes it easy to remove later and the petals from the Rosemary are contained. They can be kind of woody.

    That looks mighty tasty. I cooked Osso Buco once, but they were pretty scrawny shanks. Those ones are gorgeous. Question - is that a 3 qt (2.84 l) dutch oven you cooked the meat in? I’m trying to decide if I buy a Lodge 3 quart or 4.5 quart. I just bought a 5.5 quart because it was really cheap but boy is it big! A 4.5 quart seems like it will still be pretty darn big and I already have the 5.5. So, if that’s a 3 quart, that’s a really dandy size and helped me make my decision. Thanks!

    If you can find a local meat source, not a supermarket or chain store, like a farm market, you might be in luck. In SE PA, there are a number of local small farm/Amish/Mennonite meat retailers with these cuts.

      In this recipe I used a 6.75 QT Dutch oven. As long as the meat is covered with the liquid you will be good so a 5.5 should work 😊 Thanks for watching and hope will try as it is a delicious meal.

      Baking soda on stains then add vinegar and scrub with kitchen brush repeat if necessary. Works well on my enamel ware

    I'm shocked how much you are paying for Shank Beef bones in Canada. at $14/lb that's still like $10/lb in USA. Sure glad I got mine for like 5.50/lb right from the farmer/butcher shop and that's top notch Angus.

    Most people coat the beef in flour before putting in pan for 5 mins ether side and put in garlic diced along with other veg at same time not later during cooking you don't need your bay leaf I it 😢😂😢 belfast northern ireland

      that's definitely no joke. Seems all meat (beef, lamb, chicken, pork and, of course, fish) have increased in price at least 2x with most 3x...in just about 18mo to 2yrs.
      It's a real shame...

    I wondered how best to cook those. I slow cook them 3-4 hours in red sauce same as my oxtail but this is a nice twist They have huge shanks at a store here called Vallarta mostly hispanics shop there pricesarereal low quality is ok every thing is large biggest chicken i ever saw was there like 10 pounds HA maybe old laying hen not sure

      Question to you? At what point do you think the handlers thoroughly rinsed this meat during process, cut and packing that you trust them opposed to yourself and the safety of your family eating it directly out the package?? Do you really feel in this day and time with the minimal sanitary standards that the USDA and the FDA allow these companies that you're that confident in their process oppose to your own?? Think about it 🤔. Do you really and truly feel that once that meat gets to your countertop to cook that you don't need to anything to it before cooking it? And not only for yourself but for the safety of your children or your husband, mother or grandmother whoever you're cooking it for. If you don't, you don't need to be cooking, Really!!!

    Question: can you serve it with anything other than polenta?
    What do you do with that big clove of garlic after you’re done;squeeze it into the sauce? And can you knock the marrow out of the inside of the bone into the sauce after it’s done cooking? Did you throw the bone to the mutt?😂

      USDA research has found that washing or rinsing meat or poultry increases the risk for cross-contamination in the kitchen, which can cause foodborne illness.       Far cheaper at Costco than most places, IF you consider the quality.
      Costco is great, and really happy to see these beef shanks there recently!

      I buy all my meat at Costco and find their prices to be competitive. I don’t trust my grocery stores to have fresh meat. I also don’t have butcher stores either.
