I did substitute regular Jimmy Dean's breakfast sausage, it was fantastic. I didn't exactly follow the second part of the recipe, but I made two meals out of six eggs. One day apart.. they kept perfectly. I heated them up the next day in my air fryer

Practice with nothing but salt in the pan (outside is best until you get it down) . Once you can keep all the salt in the pan move up to a toasted crust of bread until you can get it to flip right every time. Now you should be ready for eggs.
I'm always looking for new & different ways to prepare eggs; & not just for breakfast - they're great for any meal! These 2 recipes are intriguing & look really delicious! I'm going to try both myself & am also passing them along to some vegetarian friends. They can substitute a veggie " sausage " for the 2nd recipe. Can't wait to try these recipes with various twists in the ingredients, as well. That's the real fun of cooking!

Eggs and cheese. Two of my favorite ingredients/foods. The parsley can be substituted with cilantro. I probably would add a little bit of chopped onion or scallion.
Thanks for the video. I do like cheese omelets, but I wouldn't make either of them quite like that. The first one had too many eggs, (I rarely use more than 2, and too much cheese (which looked like it didn't all melt. Plus I'm not sure I'd like the different layers of yolks and whites. The 2nd one also had too many eggs and too much cheese. And also, the multiple layers seem like a lot of extra work that could go wrong (break up).
This video has made me realise I've been cooking omlettes on too high a heat my whole life! I can't wait to try it on a low heat!
