This also works great for “over easy” eggs; cook bottom then flip and with residual heat and yokes will not over cook. For “sunny side up” just add a bit of boiling water and cover to steam the top of the eggs as the residual heat cooks the bottom.

Missed a couple of steps. Pre-cook the chicken sausage (or breakfast sausage) until browned. A dd a little salt and pepper to the inside of the omelet. A few herbs would step this up a lot. (Tarragon and/or basil)
Yeah. I'm also not keen about how they seasoned the second one. There's ample opportunity to season after the egg is cooked (before the cheese goes on), it would be much better for the egg's cooking to do that. Some chives wouldn't go astray, or even a little line of sriracha on that sausage. That said, I like the idea of using eggs in different ways. There are so many different ways to make a delicious egg dish.

I'm going to try both myself & am also passing them along to some vegetarian friends. They can substitute a veggie " sausage " for the 2nd recipe. Can't wait to try these recipes with various twists in the ingredients, as well. That's the real fun of cooking!
