    This video has made me realise I've been cooking omlettes on too high a heat my whole life! I can't wait to try it on a low heat!

      If cooking eggs normally (i.e. in one stage not three as in this video) try heating up the pan and butter until melted then turning off the heat before putting in the eggs, cooking them with the residual heat from the pan. This also works great for “over easy” eggs; cook bottom then flip and with residual heat and yokes will not over cook. For “sunny side up” just add a bit of boiling water and cover to steam the top of the eggs as the residual heat cooks the bottom.

      @@TeddyCavachon Yep, my omelette making skills have been vastly improved with this realisation. As for fried, I use a small pan with a glass lid and use a very small amount of water towards the end of the cook. Always worked fine.

    Missed a couple of steps. Pre-cook the chicken sausage (or breakfast sausage) until browned. A dd a little salt and pepper to the inside of the omelet. A few herbs would step this up a lot. (Tarragon and/or basil)

      Yeah. I'm also not keen about how they seasoned the second one. There's ample opportunity to season after the egg is cooked (before the cheese goes on), it would be much better for the egg's cooking to do that.
      Some chives wouldn't go astray, or even a little line of sriracha on that sausage.
      That said, I like the idea of using eggs in different ways. There are so many different ways to make a delicious egg dish.

      @@ConstantlyDamaged LOL!!! I understand completely. My wife's sister and family live out on the NE of the US. White sauce with a bit of pepper is too much for them. Here in Texas, ghost peppers are considered Texas pickles. (Not to be confused with Indian pickles - which blew the top of my head off.)

    I've seen several recipes with eggs but these are amazing! His delicacy in preparation is something surreal.     I did substitute regular Jimmy Dean's breakfast sausage, it was fantastic. I didn't exactly follow the second part of the recipe, but I made two meals out of six eggs. One day apart..
    they kept perfectly. I heated them up the next day in my air fryer

      I'm European John and just wondering if jimmy dean sasages have anything to do with that jimmy dean fellow who played, I think it was, Willard White in the bond film diamonds are forever. I believe that this jimmy Dean was an American country music star more than an actor. Anything to do with the sausages or just a coincidence that they share the same name?

      Practice with nothing but salt in the pan (outside is best until you get it down) . Once you can keep all the salt in the pan move up to a toasted crust of bread until you can get it to flip right every time. Now you should be ready for eggs.

    I'm always looking for new & different ways to prepare eggs; & not just for breakfast - they're great for any meal!
    These 2 recipes are intriguing & look really delicious! I'm going to try both myself & am also passing them along to some vegetarian friends. They can substitute a veggie " sausage " for the 2nd recipe.
    Can't wait to try these recipes with various twists in the ingredients, as well. That's the real fun of cooking!

      Это реально вкусно, только я в первом случае использовал шпинат со щавлем, а то у нас петрушка вообще никакая на вкус. А во втором укропа в яйца накрошил. (мне ж для себя, а не снимать! 😃)

      That sausage is pre-cooked. needs only 2-3 minutes in hot water and it's ready.

    Eggs and cheese. Two of my favorite ingredients/foods.
    The parsley can be substituted with cilantro. I probably would add a little bit of chopped onion or scallion.

    Thanks for the video. I do like cheese omelets, but I wouldn't make either of them quite like that. The first one had too many eggs, (I rarely use more than 2, and too much cheese (which looked like it didn't all melt. Plus I'm not sure I'd like the different layers of yolks and whites. The 2nd one also had too many eggs and too much cheese. And also, the multiple layers seem like a lot of extra work that could go wrong (break up).
