We eat pigs in blankets every year with christmas dinner here in the north of england, mini sausages wrapped in a piece of streaky bacon. Mmm sausage pig, bacon blanket.

ooooh, you're playing with fire here! Us wee Australians have a very long tradition of Sausage Roll recipes, I cant wait to try this one out. Ill let you know how this goes compared the usual sausage mince, grated carrot-onion-potato and light puff pastry that fills so many of our bakeries. I find that sweet chilli sauce, just enough so that you cant taste sweet chilli sauce (ironically) is a quick shortcut for full flavour. So many places here though create far too wet sausage rolls. I think they dont drain the moisture from the veges first.
I'm actually planning on making some sausage rolls today but was just going to add some thyme and shredded apple to the sausage meat, as per. Seeing these I'm definitely going to add some caramelised onion to the mix and double up on the quantity so I've got the choice of two recipes. How much would I pay for these? Probably £2.50 max, but they look delicious.
We have to make our own sausage rolls here in Florida. Mum is English and knows the real deal. I'm our resident Chef and have found that Jimmy Dean Sage sausage works great with Pillsbury Pie crusts. The only thing I do differently from this guy is that I cook my sausage first. Once cooked, drained, and towel dry THEN I put the sausage in the pie crust dough. Putting the sausage in the crust raw creates too much grease and your rolls comes out super soggy. Minched raw onion works great with the pre cooked sausage inside the roll but don't use too much. Skip the Worchester sauce in the recipe. No need for it at all. Try these and enjoy ! Cook your sausage rolls for about 20 mins at 375 F.
We have something similar here called a kolache. The big difference is that a yeast roll dough is used instead of puff pastry. But I’d very much like to give one of these babies a try!

I would also put any sesame seeds on top, slightly before they come out of the oven. Another quick brushing with egg wash and put the seeds on top. Then continue baking until done.
To be fair to you, your target market is Londoners, because they live in the capital they are used to steep prices, in leafy Hampshire, my local Morrisons do 4 long Cumberland sausage rolls cooked on the premises for £2.50
