Cooking with Frozen Vegetables, Cheap and Meal Prep Friendly

  • Let's save on groceries by using frozen vegetables for some meal prep. Meant not as literal recipes, but as inspiration and a starting point for you to cook from. Bonus points if you can spot Dougie the dog in this video.

    Frozen Corn:
    12 oz. bag frozen corn
    1/2 onion, diced
    1 chili pepper, minced
    Spices (about 1/2 tsp. dried oregano and 1/2 tsp. smoked paprika)
    Salt, pepper, oil, to taste
    Add all of the ingredients to a sheet pan. Set the broiler on high and broil until the edges char. Take out, mix well, and broil again until the edges char.
    Frozen Peas:
    16 oz. bag frozen peas
    1 cup all-purpose flour
    1/2 grated onion
    Spices (Roughly 1/2 tsp. dill, 2 tsp. nutritional yeast, 1 1/2 tsp. black pepper, 1/2 tsp. salt)
    Defrost peas and mash or process into a rough paste (still having some large peas are great). Combine with the flour, onion, and spices. Mix into a batter, adding a tablespoon or two of water if needed. Form into patties on a baking sheet, about 1/4 cup of batter in each. Cook at 350F for 30 minutes, flipping once halfway.
    Mixed Veg:
    16 oz. mixed vegetables
    2 gloves garlic, chopped
    About 2 tbsp. olive oil
    Vinegar, enough to fill container
    Spices (Roughly 1 tsp. salt, 10 peppercorns, 1/2 tsp. red chili flakes, 1/2 tsp. dried dill)
    Combine all the ingredients in a container or jar, mix, and let marinade overnight in the fridge before serving.
    Frozen Cauliflower:
    16 oz. frozen cauliflower
    Oil, for cooking
    1 tsp. dried turmeric
    About 10 curry leaves
    2 cloves garlic, minced
    Microwave for 3 minutes on high. Pulse in a food processor roughly 5 times to make the rice. Heat oil in skillet, add the turmeric, curry, and garlic. Cook until fragrant. Add cauliflower rice, and cook about 5 minutes, stirring. Season with salt.
    Frozen Spinach:
    16 oz. frozen spinach
    2 cloves garlic
    2-3 cups plant-based milk
    1/4 cup vegan butter
    1/4 cup all-purpose flour
    Blend the spinach, garlic, and plant-based milk together. Melt the butter and add the flour, cooking for a few minutes while stirring. Add the spinach mixture. Cook for several more minutes until thickened. Season with salt and pepper.
    Frozen Raspberries:
    24 oz. frozen fruit
    1/2 cup sugar
    Add the fruit and sugar to a saucepan. Cook for 10 minutes. Remove from the heat, and allow to cool so it will thicken.

    This video is exactly what I was just looking for! I’m trying to be a bit more intentional with my spending this year and simple meal preps seem like the perfect starting place. The only thing is trying to find ones that hold to the “simple” part 😅

      Thank you! I'm also trying to be a little more thoughtful in how I'm spending money, so I get it. We tried on the simple part- it's not really my forte, but I think I did pretty well!
