To make this for a toddler I would look up a hat sizing guide and only increase until you reach the crown width, then divide the total number stitches on the last round of increases by 4 to know how wide each banana peel will be. The rest of the steps will be similar to the video, make enough rows for the banana peel to be long enough :)
You can add more rows to both parts: the crown where we increased, and the banana peels themselves. When you add more increase rows, know that you must divide the number of stitches around by 4 to get the new number for each banana peel!
