RECIPE -3 lbs Oxtail -1 tbsp Low Sodium Soy Sauce -1 piece of Ginger or tsp powdered ginger -1 tsp Onion Powder -1 tsp Garlic Powder -1 1/2 tsp soy sauce/ Browning Sauce -1 Scallion, diced -1/2 Onion, chopped -1 tbsp Minced Garlic -Thyme fresh or bottled -6 Allspice Berries/ pimento -1/4 Red Pepper, chopped -1/4 Green or Orange pepper, chopped -6 Fresh Garlic Cloves, chopped -1 tsp black pepper/ crushed red pepper/ Scotch Bonnet Pepper or Habanero pepper 🌶️ -1/4 cup of Corn or Canola Oil -1 can of Butter Beans or frozen Lima beans 🫘 DIRECTIONS Start by rinsing your oxtail with water & lime juice. Next, add your soy sauce, onion powder, garlic powder, minced garlic, Fresh herbs & spices Massage seasonings into oxtail. Optional: marinate for 2 hours or overnight. In a large iron skillet , place fire on low/medium. Heat pot for 3 minutes and then add oil. Heat oil for another 3 minutes and begin adding the oxtail. Once you’ve added the oxtail, cover. You will brown the meat for 5- 10 minutes, occasionally flipping the pieces of oxtail until they are brown on all sides. Careful not to let it burn! Once the meat has browned on all sides, add 5 cups of boiling hot water. Optional: Boil your ginger with it, if you desire to. Cover and place your fire on medium fire; and cook for 1 1/2 hours or until tender. *Keep adding hot water as the water evaporates while cooking. *Once it’s soft and tender, add your can butter beans (strain water) or frozen Lima beans 🫘, fresh onion, garlic, thyme, scallion, scotch bonnet, and red/green pepper. Add more seasoning for your taste, such ad salt, a tsp each of onion & garlic powder, Stir and cover. Cook on medium for another 25 - 30 minutes and your gravy is nice and thick. Oxtail will be tender and ready to eat. * Serve it with your favorite rice and peas/ white rice black eyed peas and rice 🍚. Cheers 🥂
