    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.     Was is Chiang Mai last year and loved the food! My wife and I deliberately set out to explore foods away from tourist traps and were delighted by the variety and uniqueness of the cuisine! Watching your videos and trying to recreate our culinary adventure in Thailand!

    I normally add bay leaves, gaelangal, and lemon grass. We call it Nasi Uduk in Indonesia. Love

    Just made a double batch in my Aroma rice cooker, exactly as you advised. To my, Wonderful surprise 😮 it came out perfect and is remarkable. I still am in awe that I made this delicious rice. I have not been able to consistently prepare rice until I started watching your channel. Thank you for taking the guesswork out of this delicious and easy recipe.     This is called 'nasi lemak' in Malaysia...our staple. We eat it with anchovy sambal which is spicy 🌶 and like you said we add pandan leaf

    nice! I like pandan leaf in this rice dish it gives a unique flavor. I don't add much salt while cooking because the coconut milk enhances the salt flavour and can be over powering. I cook rice in saucepan on gas stove. The trick to not burning bottom is to stir once after cooking for about 10 minutes and adding a little bit extra fluid if looking to dry. If you feel the rice might still burn at bottom, turn the heat off but leave the lid on to continue the steaming process for another 5 minutes. You don't want to stir too much because rice can get mashy. I love this rice with chicken rendang.

    Im Filipino and Thai foods becomes part of my regular dishes, i already, been cooking 4 kinds, such as green curry, tom yan kun soup, pad thai and chicken basil... and looking forward to make that green papaya salads.

    Thanks for sharing. It’s similar to the way we make Caribbean coconut rice. Only difference is a nob of coconut oil and butter, (no sugar) and add a bit of white pepper!! I love coconut rice with spicy food and sweet and sour green mango salad!! So yummy!! I usually eat the leftover rice for breakfast!! Lol A bowl of coconut rice and fried, sweet plantains!! 🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤

    Made your recipe, so easy and delicious. One local eatery has their coconut rice dyed blue, so I added a drop of food coloring, still delicious. Will be using this recipe whenever I need coconut rice.

    Hi Pailin!! Coconut rice is also served in EVERY Thai restaurant in Australia as well... We Love it!!! I love it particularly with all seafood stir fries and especially with curries :) mmmm Coconut rice with Choo Chee Salmon .... :)

    Love it :-) I make mine amost the exact same way. However, I use Coconut Sugar - not white sugar... I remember my Sis-in-law had a dinner party (She's Chinese from Beijing), anyway, I made Coconut Rice and it was gone in a flash. Then everyone wanted my recipe... Sis didn't like that... being upstaged and all... lol

    My rice cooker always sticks on the bottom too love this recipe do you turn the rice cooker off and leave for 10 mins of leave it on warm ??? thank you
