Thanks for sharing. It’s similar to the way we make Caribbean coconut rice. Only difference is a nob of coconut oil and butter, (no sugar) and add a bit of white pepper!! I love coconut rice with spicy food and sweet and sour green mango salad!! So yummy!! I usually eat the leftover rice for breakfast!! Lol A bowl of coconut rice and fried, sweet plantains!! 🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤
nice! I like pandan leaf in this rice dish it gives a unique flavor. I don't add much salt while cooking because the coconut milk enhances the salt flavour and can be over powering. I cook rice in saucepan on gas stove. The trick to not burning bottom is to stir once after cooking for about 10 minutes and adding a little bit extra fluid if looking to dry. If you feel the rice might still burn at bottom, turn the heat off but leave the lid on to continue the steaming process for another 5 minutes. You don't want to stir too much because rice can get mashy. I love this rice with chicken rendang.

I remember my Sis-in-law had a dinner party (She's Chinese from Beijing), anyway, I made Coconut Rice and it was gone in a flash. Then everyone wanted my recipe... Sis didn't like that... being upstaged and all... lol
Our favorite local Indian resturaunt has a coconut rice option, and my wife really likes it with any curry that's coconut based. I think it's good, too!

this sounds like nasi lemak, a malay dish found in malaysia & singapore especially if you added in the pandan leaf. normally served with fried egg, sambal, fried anchovies & peanut and either fried chicken or fish! plus ur videos always make me hungry😅

Where I live the versions of rice are plain white rice and. Minute Rice. Is there a way to make that kind of rice work? I've never heard of the types of rice you have mentioned. And the only jasmine I've heard of is in perfume. I'm not ignorant, just not well travelled.

Like this recipe. I searched for Thai Coconut Rice and got a lot of hits, but Coconut Rice Pudding was the closest result and that's just not it. ;) Thanks for all the good info and the delicious food!

Only if you uploaded this yesterday, I could try making the coconut rice toget! I made corn and cucumber salad yesterday so I just ate with my regular brown rice lol.
I have a Thai relative who told me to make coconut rice by cooking the rice in the normal manner and then adding some coconut milk, a pinch of salt and some Kaffir lime leaf. What is the difference between adding it later and cooking the rice in it?

Made it last night and it turned out perfectly. The toasted shredded coconut really added a lot of texture, it was a better addition than I thought.

This is called 'nasi lemak' in Malaysia...our staple. We eat it with anchovy sambal which is spicy 🌶 and like you said we add pandan leaf
