Ingredients:
•4 tomatoes, diced
•1 tablespoon tomato paste
•2 tablespoons olive oil
•1 tablespoon vegetable oil
•3 cloves garlic, sliced
•1 small onion, minced
•1 green chili pepper, minced
•1/4 tablespoon salt
•1/4 tablespoon black pepper
•1 teaspoon dried thyme
Directions:
•In a pan on medium heat, heat the vegetable oil and sauté the onions then season with salt.
•Add the tomatoes, green pepper, and garlic then stir.
•Add the tomato paste and season with salt and pepper then cover and leave on low heat until it thickens.
•Pour into a serving dish and garnish with the dried thyme and some olive oil.
