- Some people say that the hard-shell taco is sacrilegious. It is not a taco and it is not Mexican they say. But actually, that beautifully crispy and fried tortilla filled with cheddar cheese and lettuce does have a Mexican background and we should be very thankful and proud about it. On this episode, our taco guru Francisco Gómez takes us to the heart of California in search for the best hard-shell in town.

helll yea mitla cafe,! that place need to be recognized as spark that stared taco bell. its crazy we grew up eating marisco jalisco, and mitla. We never knew how historic they where untill recently.
I grew up (I'm 73) as the only anglo in the barrio (I was known as the vato americano). Our local corner store produced menudo (you had to bring your own pot to carry it away), enchiladas, tamales and hard shelled tacos. I remember asking for a taco in English and abuela in the back telling her granddaughter, "Dile al gringo que ya no hay." I replied, "Orale abuela déme un taco." "Pués, habla español entonces."
Now explain to the rest of the class what those words mean.

Grew up in Riverside and have ate every place several times. The best hard shell ground beef tacos anywhere are in Riverside though. Go to Tina's Mexican food on University Ave.

My grandpa, God bless him, frequently took me to Cielito Lindo for taquitos and a Coke in a glass bottle. That was about 55 years ago, and I still remember those occasions fondly.
Really, there is so much spectacular Mexican food in Southern California, I don't know how you'd decide which establishment to feature.

My family ate at Mitlas every sunday from the 60s to about 93, or 94? They said something happened and it wasn't the same. Mitlas catered my grandfather's funeral a few years ago and I thought that they did a great job! Se hacen un jale bien chingasote cabrones!!! The food was soooooo gooood!!!

As an LA native, Marisco Jalisco is amazing!!! Their tacos are bomb, but they have some of the best ceviche as well!!! If you're ever in LA, it's an absolute must try

Yep,this is where modern Mexican-American food got started. I've never been to mitla cafe but I salute to them for paving the way Americans think about Mexican food. It may be flawed and wonky at first but Hey it's a start!

What is a 'sacrilege' is taco bell. A lot of mexicans forget that hard shell tacos have always existed as 'tacos dorados', and as he said the food changes depending on the region. A lot of northerners have a dislike of the flavor from southern tacos, so who says you can't change the recipe as long as it tastes good.
Finally, my town!
Nothing tops a two hard shell taco combo with rice and beans at a mom and pop restaurant. Extra points if they say “careful, hot plate” when dropping off the food

For those that do not know, Mitla Taco's has a connection with Taco Bell ! Glen Bell creator of Taco Bell actually worked at Milta Cafe and learned how to make the hard shell taco.
Tito's Tacos, moved to OC from culver city in late 70's, been a customer since then

@@albertledesma5173 it's common knowledge to everyone in the San Bernardino area. Glen Bell started Taco Tia as his first taco chain and sold them as a whole as he wanted to make another chain a franchise that people would buy into as owners and operators of his branding Taco Bell.

If you are ever in Mount Vernon, WA try the Mexico Cafe. Great crisp tacos. Make sure you put the house hot sauce on the taco.
I remember the first time I went into my local Mexican grochery, I was getting a mess of dried chillies, mole paste, dried poulantro, Mexican oregano, cinnamon and star anise. The older woman behind the counter seeing a midwestern white guy gave me a look like she was worried I was going to cook her dog... I was shocked and said slowly "they are all for differnt recipes..." She started to laugh so hard.
