- Author, chef and Strictly Come Dancing finalist John Whaite makes a luxurious chocolate tray bake with a glossy ganache topping - perfect for a special occassion.
Light and fluffy, yet rich and indulgent, this ultimate chocolate tray bake cake uses a mixture of milk and dark chocolate as well as cocoa nibs for added bite. John has used freeze-dried raspberries for a pop of vibrancy but get creative with the toppings.

Ingredients:
55g cocoa powder
225g self-raising flour
1 tsp bicarbonate of soda
200g dark brown muscovado sugar
70g caster sugar
4 tbsp sunflower oil, plus extra for greasing
150g buttermilk
2 British Blacktail Large Eggs
For the chocolate silk ganache
125g No.1 Dominican Republic Dark Chocolate, 65% cocoa
125g Cooks' Ingredients Milk Chocolate, roughly chopped
50g butter
2 British Blacktail Large Eggs
30g caster sugar
2 tbsp cacao nibs
2 tbsp Cooks’ Ingredients Dried Raspberries

Never normally bake chocolate cake because they are just too dry but I’ll defo give this a go😝

MIght I humbly suggest Molasses Sugar gives even more delicious, unctuous, flavoursome, treaclyness than even dark Muscovado.

If you click on full recipe is says to use 140 mls of cold water
