    Ingredients:
    For the Pie Crust:
    2 cups white all-purpose flour
    1/4 cup granulated sugar
    1/2 cup unsalted butter (cold)
    2 large eggs
    4 tbs heavy cream
    1 tsp baking powder
    1/4 tsp salt
    For the Cheese Filling:
    500 gm ricotta cheese or home made pot cheese
    100 g sugar
    100g butter
    2 eggs
    25 g flour
    125 g raisins
    1 tsp of vanilla extract
    Instructions:
    In a mixing bowl mix together your flour, baking powder and salt.
    Add cold butter and blend it together with a pastry cutter or in a food processor
    Add sugar, eggs, cream and vanilla extract and work the dough until all ingredients are well blended together and form a ball.
    Cut the ball of dough in half, cover with plastic wrap and refrigerate
    Line your 8 by 8 baking pan with parchment paper
    After the dough has chilled sufficiently, remove one portion of the dough from the fridge and place it on a lightly floured surface. Roll the pastry into rectangle more or less the size of your baking pan
    Fold the dough in half and gently transfer to the baking pan and pressing with your fingers if you need to fill the bottom of the pan
    Prick the dough with a fork all over the surface and bake the crust for about 15 min in 180 degrees Celsius until golden brown. Let it cool a bit
    Add the cheese into the food processor and process for around 60 seconds.
    Transfer the butter (room temperature) in to the bowl of your stand mixer and beat it until light and fluffy. Add the cheese and mix it together. Add sugar and mix it for another 30 seconds.
    Add eggs one at the time, mixing well after each addition and then add vanilla extract and mix 30 seconds more.
    Add raisins and flour and fold them in with a spatula.
    Transfer your cheese mixture on top of your baked and cooled crust.
    Remove the second part of pastry from the fridge and roll it into a thin rectangle.
    Using a pastry wheel or pizza cutter, cut the pastry into about 1 cm strips. Place the strips of pastry on the cheese layer creating a crisscross pattern.
    Bake for about an hour at 150 degrees Celsius (300 F) until top is golden brown. You may have to cover the cake with a aluminium foil after around 30 minutes to prevent browning too much.

    How wonderful that your Dad is sharing his recipes! I have never seen a cheesecake like this, very different! I go to a grocery store that sells pot cheese, which for some reason is difficult to find. I use pot cheese to make my mother-in-laws (of Eastern European Jewish decent) recipe for crepes and I do know that it makes a nice filling:)

    Just tried this recipe today, and I loved it. My great grandmother was from Warsaw. she used to bake a cheesecake with dry cottage cheese.

      +Kary ds It will change the taste, cream cheese is much more tangy than farmers, ricotta or pot cheese!

    I love this Cheesecake.....my Mom use to buy this kind of cheesecake at a Ukrainian bakery called Anna's in Toronto....it was so good. Thanks for sharing your recipe Pani Ania. :-)

    Beautiful. This is definitely going to be on our menu for Easter. Are there traditional Polish dishes for Easter like there are for Christmas Eve? Would love to see some of those or ones that you like to use for your family at Easter. Thank you for this lovely recipe! :)

    I LOVE THIS CHEESECAKE there used to be a delicatessen polish in Ealingbroadway it was there for years can not find this type of cheesecake cake anywhere.Lovely with thick dense cheese with sultanas in it with thin strips of dense pasty in crisscross over the type lovely dense pastry on the bottom my mum and I ha tried everywhere.Do you know of any polish delis that sell this particular type Thankyou

    Anita, when I was growing up in Southern Africa, we used to buy cheesecake like this from a Polish baker. It was absolutely delicious! The only difference was that it had a layer of apples as well. Do you know the dessert I'm talking about. I really loved it!!

    I am sorry it took me so long to reply. I am visiting my parents in Poland right now and it is pretty crazy around here :)
    For non fan oven I would add 15 minutes to my baking time. This should work but you need to keep an eye on your cake because ovens can be different with their temperatures. If the cake is browning to fast i would cover the cake with a aluminium foil. The cheesecake is done when the middle of it is up and set :)

    Hi Ania - love your videos. Really, really love this style of cheesecake. I'm so happy I found your recipe. Can you tell me, I want to make my own pot cheese. You give a recipe for pot cheese in another of your videos where it calls for 6 cups milk. Does this amount of milk equal to the 500 g of cheese your sernik calls for? Sorry - don't have a scale at home. Thanks for your help and again, keep up the wonderful work!

      The answer to your question is: yes, it comes to around 500 g but it depends on the milk, sometimes it is more, sometimes a bit less!

    Dear Ania, Thank you very much for your recipes. However, I find it difficult to work out the exact weight of some of your ingredients. You have given some of the measurements in "grams" and some in "cups". I tried working out the size of the cup you used but again wasn't sure how to use that to measure solid butter! My sernik has ended up too floppy and I am so disappointed with it. Would it not be possible to give all measurements in grams please as it makes is so much easier to follow your lovely recipes. Thank you.

    I just wanted to make sure I understand--after you cook it for an hour, you turn the oven off and leave the cake in the oven, with door shut for another hour?...Thank you!

      Yes it is the way, i might put a tea towel in the door of the oven to let the heat go out a bit faster :)

    I never heard of using ricotta cheese in sernik and I am from Kraków

      it is a bit tricky to find hard cheese here in Canada so this is what i use because i can get it in any grocery store :)

      ok, I watched it and it is croissants pastry made with sugar and baked in muffin pan... I love the idea so I will work on a recipe... I would add cinnamon.... yes yes yes :)
