That pastry is going to be hard as rock. My pastry is Self raising flour, salt and lard. As short as is possible. And if in a shallow tin there is no need to blind bake. Yours looked great.
Gordon Ramsay is a god. But got to say I preferred watching this version. Visually very impressive. Love the rustic look of the crust. Might try making individual ones for parties.
Usually quiche dont have pastry on top, then it would a sort of a pie, but it would be good too, just dont put grated cheese on top of the pastry and poke a hole like an Apple pie so It wont be soggy

This looks amazing. Would it be too much to put pastry on top as well? Never tried this but looks like something I’d enjoy. Great vid.

My crust has stuck to the paper before, is that from underbaking the first time?
Wow a lot of bacon grease left in it and leeks cooked down to nothing it appears

Kneading the dough as if he's making bread. It's a NOOOOOOOOOOO from me. For 4 eggs I'd use 400 ml of cream, and 4oz of chedder cheese.
