    Ingredients / উপকরণ:
    ¼ cup cooking oil / ¼ কাপ তেল
    1 cup thinly sliced onions / ১ কাপ পাতলা করে কাটা পেঁয়াজ
    7-8 whole black peppercorns / ৭-৮টি গোটা গোলমরিচ
    4 small cinnamon sticks, broken / ৪টি ছোট দারুচিনি, টুকরো করা
    3 green cardamom pods / ৩টি সবুজ এলাচ
    2 black cardamom pods / ২টি বড় এলাচ
    2 bay leaves / ২টি তেজপাতা
    ¼ cup water / ¼ কাপ পানি
    1½ tbsp garlic paste / ১½ টেবিলচামচ রসুন পেস্ট
    1½ tbsp ginger paste / ১½ টেবিলচামচ আদা পেস্ট
    1 tbsp Kashmiri red chili powder / ১ টেবিলচামচ কাশ্মীরি লাল মরিচ গুঁড়ো
    1½ tsp turmeric powder / ১½ চা-চামচ হলুদ গুঁড়ো
    1.5 kg meat (your choice) / ১.৫ কেজি মাংস (আপনার পছন্দমতো)
    ¼ cup mustard oil / ¼ কাপ সরিষার তেল
    1½ tsp salt (to taste) / ১½ চা-চামচ লবণ (স্বাদ অনুযায়ী)
    1¼ tsp black pepper (to taste) / ১¼ চা-চামচ গোলমরিচ (স্বাদ অনুযায়ী)
    1 cup hot water / ১ কাপ গরম পানি
    1¼ tbsp freshly ground coriander powder / ১¼ টেবিলচামচ গুঁড়া করা ধনিয়া
    2 cups soaked split chickpeas (chana dal) / ২ কাপ ভেজানো চানা ডাল
    2½ cups hot water (as needed) / ২½ কাপ গরম পানি (প্রয়োজনমতো)
    1¼ tsp salt (to taste) / ১¼ চা-চামচ লবণ (স্বাদ অনুযায়ী)
    8-10 green chilies / ৮-১০টি কাঁচা মরিচ
    1 tsp garam masala / ১ চা-চামচ গরম মসলা
    ½ tsp roasted cumin powder / ½ চা-চামচ ভাজা জিরা গুঁড়ো
    1½ tbsp ghee / ১½ টেবিলচামচ ঘি
    1 tbsp thinly sliced ginger / ১ টেবিলচামচ পাতলা কাটা আদা
    1½ tbsp chopped fresh coriander / ১½ টেবিলচামচ ধনিয়া পাতা কাটা
    Few drops of lime juice / কয়েক ফোঁটা লেবুর রস
    Instructions:
    Initial Preparation:
    In a large pan, heat ¼ cup of cooking oil over medium heat.
    Add 1 cup of thinly sliced onions and sauté until soft.
    Spices:
    Add 7-8 whole black peppercorns, 4 small broken cinnamon sticks, 3 green cardamom pods, 2 black cardamom pods, and 2 bay leaves to the pan.
    Fry until the onions turn light brown.
    Ginger-Garlic Paste:
    Once the onions are browned, add ¼ cup of water to the pan.
    Add 1½ tbsp garlic paste and 1½ tbsp ginger paste.
    Sauté for 20-30 seconds.
    Spice Mix:
    Add 1 tbsp Kashmiri red chili powder and 1½ tsp turmeric powder.
    Sauté over medium-low heat until the mixture looks glossy.
    Meat and Cooking:
    Add 1.5 kg of meat to the pan and mix well.
    Add ¼ cup of mustard oil and 1½ tsp salt, then sauté over medium heat for 5 minutes.
    Add 1¼ tsp black pepper and 1 cup of hot water. Cover and cook on low heat for 20 minutes, stirring once.
    Adding Dal:
    Add 1¼ tbsp freshly ground coriander powder and mix well.
    Add 2 cups of soaked split chickpeas (chana dal) and mix thoroughly with the gravy.
    Add 2½ cups of hot water as needed, 1¼ tsp salt to taste, 8-10 green chilies, and 1 tsp garam masala.
    Mix well, cover, and cook for 40 minutes over low heat, stirring occasionally.
    Final Touches:
    Check the doneness of the meat. If it is still hard, add a bit of water and cook for an additional 10 minutes over low heat.
    Open the lid and add ½ tsp roasted cumin powder, 1½ tbsp ghee, 1 tbsp thinly sliced ginger, 1½ tbsp chopped fresh coriander, and a few drops of lime juice.
    Serving:
    Your delicious dal meat is now ready to be enjoyed. Serve hot with rice or bread. Enjoy!

      We used beef for this recipe, but you can absolutely use mutton or lamb if you prefer. A handy tip for mutton and lamb: wash the meat with a bit of baking soda and lime juice to neutralize any gamey smell, ensuring it doesn't overpower the spices.
