- Want to know How to Make the Best Collard Greens Recipe Without Meat? This has to be the best collard greens recipe without meat ever. The great thing about this soul food recipe is that it's easy to cook. These collards greens were from our urban backyard garden.
Normally, there would be some type of smoked meat in the greens. For instance, most Southerners would add either smoked turkey necks, smoked turkey legs, smoked ham hogs, fatback, smoked bacon, smoked...well you get the picture. This is a healthier way to cook your greens meatless. After watching this video you will learn how to cook collard greens the vegan way.

Thank you so much for sharing. I was looking for a way to have flavor yet not add the meat. I add similar seasoning too like the red pepper flakes. Gives it that kick. I've always used liquid smoke in my black-eyed peas didn't know why I never thought to add it to my greens. Well off to the kitchen to make my greens today. Have a great day!

Let me first say that I appreciate the video. I have a suggestion or two for people like me who are viewing to learn. It would be helpful if you listed a recipe of ingredients and measurements. I may guess and say you were working with about 2 lbs of greens, but it would be nice to be given that info. The remainder for the demonstration was great. Keep up the good work.

@@passingseisins1332 thats awesome. have you tried eing one for five days? Its challenging yet rewarding. We tried it for a whole year and love the outcome. We try to eat more grass fed beef now than regular meats.

Nice. Not counting the labor involved in growing collards, the hardest part of cooking them is washing them and cutting the leaves into "bite-sized" pieces. I do not discard the stems. I find that I can get collards very soft by cooking them anywhere from 1/2 hour to 2 hours, depending upon the particular cultivar. I haven't been able to _buy_ collards that cook to soft in less than about 50 minutes but some years ago when I had a garden I grew a variety that took only 30 minutes to cook. Got the seeds from a small company, not from one of the big seed companies. Don't remember the name of the company or the cultivar offhand; I would have to look it up - but not only did these take only 30 minutes to cook, but they were also the tastiest collards I ever tasted. Nowadays I buy a 3-pound bunch and, after cooking them, I wind up with 6 to 8 pint-sized containers - and I freeze most of these. I was surprised to learn that when compared with each other at the same level of hydration, collards have almost as much protein per unit of weight as soybeans do. No kidding! Don't just take my word for it; check the United States Department of Agriculture Nutrition Database. Looked at the amounts, did a little arithmetic - that's what I found out. Collards are my favorite cruciferous vegetable. I have a vegan recipe that I ought to post on youtube.
That is great. I could typically leave the stems on as well for the amount of time i could them for. I just do it...well..because Ma Dukes would do it lol

@@TheNakidGardeners yes! Vegan recipes, especially Southern food. They are so hard to recreate with those flavors without animal products. I never thought about putting liquid smoke in the greens, and all the recipes I've tried direct to put vinegar in at the beginning. I'm def trying your version our next... Gotta find that Goya seasoning too
@@emcduffie916 yes! Putting the vinegar towards the end so it doesnt cook out. I like that tang but you can put add it at the beginning.
There are a lot of substitutes you can use. We have a few meals in our playlist for no meat dishes.

Can you please say what the Goya seasoning is? I couldn't hear what it was called. Would love to try.
You can get the Goya seasoning in the Hispanic aisle of the grocery store or it could even be with the regular spices. If you cannot find the Goya seasoning you can just use Italian seasoning.

It would also be nice to finish the dish to completion. Just don't tell us what to do, but let us see you do it as well. I am making reference toward the end when you tell us to add vinegar and oil at the end but you don't do it. When duplicating recipes online, we want our dish to taste exactly how yours tastes. Otherwise, we’ll question ourselves if we did it right. Oh, yeah, measurements are a must!

It is mostly spices that you would like to use. Then add the liquid smoke and EVOO to give it a nice smooth smoky flavor

How long to cook?
I normally cook them overnight on low because i like them tender and soft. However you can cook them for about three hours or until the tenderness you prefer.
For the liquid smoke which flavor mesquite or hickory?
You can use the flavor your heart desires. Hickory if you don't want the over powering Mesquite flavor

You can if you want. I find that most of the time it will make its own pot liquor though.

Just broth. The leaves will provide enough liquid to cook in.
