Thank you for all the work snd time in developing these recipes. I had tried the recipe but replaced quinoa with Lupin flour because my body reacts to high oxalates food like quinoa. I know quinoa would had worked beautifully because I used to make a bread made of soaked quinoa only and it was amazing. This change in the recipe had made a very good thin crispy pizza base which I enjoyed a lot and I will make it again. So thank you very much.

I love how the roti puffed up and softened. I may try seaweed powder instead of xantham gun. 1 full teaspoon seaweed and see if it still wrks. Thank you! 👌🏽
Thanks a million for the recipe. I tried and chapatis came out well, easy to roll out, did not break, also I kneaded the dough bit tight, chapatis were bit heavy. This is as close it could get to the gluten regular chapatis!

Hello! We cooked the roti on high temperature. The dough shouldn't be too soft, and not too hard, just regular wetness. In the video, I cooked the first side for a few seconds, then I flipped it and let the other side cook completely. Then I flipped it back to the first side and pressed it lightly with a towel. The roti does not puff up if you flip it too many times. I hope it turns out well now!
Good morning, Thank you for this recipe, however not sure what happened, but out of the 6 rotis I made not one of them using the damp cloth as well, so it didn’t burn, none of them came up and bubbled, they sadly stayed flat, and just like a flat bread, I tried with all 6 at even different temperature of my pan, i case this was the problem. I have been eating gluten free for 8 years, I am not coeliac but had very reduced cartilage in al, my joints, my knees were worse, but also my elbows as well, when I did research and found out gluten actually eats away at the cartilage and when putting nutrients into the body then these nutrients do not get absorbed, so after having Fibromyalgia for 27 years as well, any recipe gluten free for me is awesome, I have been making flatbread recipe with chillies and cilantro garlic, and Naan bread, but these just didn’t work. Any clues as to why they did not bubble up and stay nice and soft. Thank you.

Out of all of the recipes for roti I have made, this is the best out of all of them. It tastes very similar to wheat flour. The quinoa tastes bitter if you only use quinoa flour, so if you mix it with oats (and if you want, tapioca flour) it tastes much better.

Yes otes contain gluten. Their are some otes those are gluten free, they will have level says gluten free. Otherwise may trigger your problem

Quite difficult to make roti without some binding agent. You can replace the gum with powdered psyllium husk. 1 tbs / 1 cup of flour.
Can’t we just let it puff and when it goes down open a little corner and fill it whit whatever we want to put inside?
