Hello, thank you for your interest and reaching out with questions. For the red beans, you should add enough water to cover the beans and cook till soften. You will eventually reuse the water to blend with the sesame and the beans. The more water you add, the longer it will take to boil down later. The 20-30g I added at the end was wheat starch. The purpose was to increase the stiffness. I would highly suggest to pinch the filling to see if it's stand. If it doesn't, feel free to add wheat starch about 5g at a time. Mix and retest.

I suggest making your own mooncake syrup. Store bought are very inconsistent with my recipe. All purpose flour are very common.

糖漿大稀,做月餅糖漿要好準確,現在只有一個辦法,你將月餅放入焗爐用300F焗10分鐘,但係你要小心留意处皮乾了拿出來, 唔可以焗太耐月餅會硬,希望幫到你,得与否给我知谢谢!
