Can you easily access the Sapphire Falls main entrance from this path? I’ll have friends staying there when I visit and we’ll be meeting up!

Yes! in the video where the sign has an arrow pointing to sapphire falls at around 2:30 there is a small path that circles around to that resort. basically you just keep taking that path around until you hit the sidewalk and hang a left and follow that all the way to the sapphire falls lobby. that is also the path you would take but in reverse if you want to take the water taxi.

Is it well lit for the night time walk back?

I'd say the garden walk is decently well lit! Some of the path can also be sidewalks along the street too. I think you'd be fine to do it at night.
