This series was originally for a TV show that was broadcasted in Minnesota, I'm sure expenses weren't a problem.
How did you get those sugar canes through customs?
If you cut the nodules from the stalks that can sprout into new plants, it should be legal to pass through the border with. That's what I did, but they fortunately never checked my luggage at customs, so I also may have just gotten lucky.

Why do you need to extract the cocoa butter then add it to the ground cacao later?
That way you can add additional cacao butter and have a higher percent of it in the chocolate. This allows it to be formed into bars and have a smoother and better tasting chocolate.

+Ceci Krauss-McClurg If the beans are dried, you're fine to bring them back. I think it's just fresh produce or anything that could be planted and grown. Ironically we brought back bugs with us too for an upcoming project, but they were also dead and dried.

Making maple sugar probably would have been cheaper. If made with early season sap it would probably be a purer form of sucrose than you got from the sugar cane.
